It is super light.
Heats up very quickly (do not go above medium).
So easy to clean it is ridiculous.
The cover fits the frying pan as well.
The quality is fantastic. It's not like the "Green" pans that only have a thin, painted-on coating of ceramic that wears off in two months. There is an actual, full layer of ceramic over the metal. Then another coating over that.
Get this, and the others!!! You won't be sorry.
I gave it a test run with potstickers, which are a good test for a covered pan. You have to steam them until they're soft and then crisp up the bottoms.
I followed the directions and pre-seasoned the heated pan with cooking oil. Then after adding oil, water and the potstickers, I brought it to a boil using only medium heat on the electric stove. It worked like a champ in no time. Heat was evenly distributed and transferred efficiently. I adjusted the cooking method using half the heat I normally do.
The part I was worried about the most was driving off the rest of the water and crisping the bottoms by pan frying in the leftover oil. As they got brown, I was concerned they would stick to the pan and leave a residue on the white ceramic coating. They did not stick and the pan looks like I just took it out of the box.
I'll follow up in s couple of months on how durable the pan and coating stay after normal use.
I was in love with this pan, it was non-stick. I was strictly cooking on low or medium heat. It worked beautifully at the beginning. I was using it every meal. And then one day it dis colored a bit and started to stick.
I wasn't expecting it to last for ever, but was hoping for good use for a year or two. It was a short lived beauty. Very disappointed. I'll keep looking for one nontoxic nonstick pan that will last for a reasonable time.
