Unfortunately, the option to "see newer model" was not available at the time I placed my order. If I had seen it, I would not have ordered the newer model since I needed the one with metal handles that can be put in the oven. I would return it for a replacement but would probably be sent the same pan again. It was cheap enough and works for most purposes so I just kept it, but it would have been nice to know about the substitution beforehand.
The pot itself appears well constructed and can compete aesthetically with my moms expensive pans. I bought this as a ramen cooker (I'm a college student, obviously) which it does very well.
I can see why some folks were concerned about the punch-outs for straining pasta, they are a bit sharp but not razor sharp in my case. Nothing a bit of sandpaper wouldn't fit, but I haven't bothered.
I do have two very minor nitpicks about the pot. First is the shape of the handle is decent but I wish it was a bit easier to grip. Coming from a thin aluminum handle this one is harder to grip at the end because it gets a bit too thick, which is something you sort of need to do since the handle is too hot near the pot. Second is the knob for the lid is touching the glass, and it consequently gets as hot as whatever you are cooking (in my case, boiling water). It would have been a nice touch to put a silicone washer on it, I will probably add one myself.
All in all, this is an outstanding piece of cookware for the price range. Don't bother with the cheap aluminum or ceramic pots, and this one is just big enough to do heavier tasks like pasta sauces for 3-4 people when I'm not using it for my ramen.
First, it is made of stainless steel. This is a pre-requisite for preparing foods that involve gestation of bacteria. This is easy to clean, it is easy to sterilize and it is very durable.
Second, the aluminum encapsulated bottom is what you need for careful temperature management. Aluminum is a soft metal (like copper) so it conducts heat very well. Applying heat to the bottom, from any source, the heat will spread quickly all across the bottom and a little way up the side. When making yogurt and cheese, you have to hit 110 degrees fairly accurately and this helps you do that with a small amount of heat from either a gas or electric stove.
Third, the handle is of rolled stainless steel, which means it is hollow - that means the handle will stay relatively cool even if you are heating the contents of the pot to a high temperature.
Fourth, the heavy glass lid is ideal for protecting contents from accidental contamination - it allows you to see the contents if it is covered, and, the lid has a small (nicely grommeted) hole in it to relieve steam and allow insertion of a thermometer or temperature probe so that you can monitor the temperature of the contents.
Fifth, the price is fantastic compared to other forms of a pan.
Sixth, the pour spouts on either side of the pan are very accurate and allow you to pour small amounts into small jars or other containers without any spill or mess.
Seventh, this is a large pan and allows you to easily make up to two quarts of cheese or yogurt so that you don't have to make multiple batches.
I shopped around, and bought this and I am glad I did.
