I selected the Weston over other models largely due to its positive review in Cooks Illustrated magazine (if you are not familiar with CI’s equipment reviews, they are quite thorough). This model uses a larger vacuum motor, which extracts more air, preserving food freshness longer – a claim tested in the review. Controls are simple and intuitive. The Weston bags and bag rolls seem to be priced more economically than those offered by other vacuum sealer brands.
My personal experiences with the machine have all been positive. Limitations of the Weston sealer are 1) that larger motor is rather loud, and 2) latching the hinged top to takes a downward force of about 10 lb. on each end. There is a YouTube video demonstrating these two points, so they came as no surprise to me.
I spent more than I had intended when I began my search, but the Weston seems to be a sturdy machine. Weston also provides an extensive list of replacement parts on their website should a repair be needed.
I noticed that the unit evacuated bags more consistently than roll material and I concluded that the bag/roll quality might make a difference. My working theory was that the lid clamped down so hard on the bags that it blocked the channels formed by the textured side of the bag thereby preventing the complete evacuation of the bag. I only used Weston brand bags and rolls. I thought that maybe other brands had a rougher texture and would not be blocked by the lid clamping pressure. I decided to experiment and purchased Food Saver brand rolls, but they did not work any better.
I then discovered, quite by accident, what I think the problem is. I was evacuating a bag made from a roll of Weston material and the evacuation process had stalled, i.e. the vacuum pump was running but the bag was not evacuating. I inadvertently rested my hand on the lid. The evacuation process immediately started back up and the bag evacuated properly. I repeated this several times and every time the evacuation process stalled I pushed down on the lid and the bag would evacuate properly. I think that the lid was not crushing the texture as I had thought, but not creating a proper vacuum seal around the bag. By pushing down on the lid, a proper vacuum seal was made and the evacuation process continued correctly.
My guess is that if the vacuum forming surfaces are not perfectly parallel, this could cause a poor vacuum seal around the bag. This simple step of pushing on the lid makes this a four star rating instead of a one star rating.
I've seen a number of reviews saying the Weston failed. Now I know why.
