The Weston sealer is amazing! The sealer is able to make a 1/4" wide seal even with oil in the sealing area. The machine requires a short cool down period between seals (average of about 5 seconds), but can seal 50-60 bags without overheating. It's considerably larger and heavier than the FoodSaver sealers I have, but I value the reliability of the seal over any weight/space issues. The price is what kept me from buying this sealer earlier, but it is worth every penny. This one sealer is replacing my other two FoodSaver sealers.
I vacuum seal about 50-60 bags of oilier cooked meat about every 3 months, so I'll provide an update as I'm able to use the sealer more.
The unit does not adequately remove air when sealing moist meat and fish.
The motor that drives the vacuum sealer only runs for 2 or 3 seconds.
To get it to run longer--which is necessary if you wish to extract most air before freezing (the whole reason one buys a vacuum sealer) you must trick
the machine into thinking it has not established an adequate seal.
To do this, you must cut little strips of 2 sided vacuum bags and place them across a "corner" of the oval seal
insert the bag that you are trying to seal.
the machine will run until you remove one of the strips from the corner. --while maintaining downward pressure on the lid.
This may work approximately 50% of the time if you leave 2 minutes between running the motor.
Any faster, and the strip will not heat adequately to seal your bag--regardless of whether it is a weston bag or anything else on the market.
Why must I develop an elaborate workaround for a product that I spent close to $400 on?
better question: How much do I need to spend in order to get a sealer that does the following:
1. Extracts all air before sealing
2. Is capable of establishing a durable seal every 60 seconds.
If you would like to do either of the following, do not purchase this unit. I thought $400 would be enough but clearly it is not.
We wound up ordering their Pro 1100, which has the 11" sealing bar (like most other vac sealers (FoodSaver etc)), as it has the external port for sealing containers and mason jars as well as a roll storage and cutting bar. It is also 4" or so narrower. As we don't process large wild game, we had to decide on which options were more important to us. The Weston Pro 1100 won that decision. Either machine will be a significant addition to any kitchen.
What you have to do is as flows: put the item you want to vacuum as instructed inside the bag. Place it on the vacuum seal line. Now get a new bag and cut a little section of the vacuum bag about 1"x2" (it has to have both side intact- smooth and rigged side). You can use the rest of this bag for later use. Place this strip next to the bag you are sealing where both bag and strip are on the seal strip of the unit. It should look like you have a bag that is getting vacuumed and a strip that is just place next to the bag but not touching. Push start and you will see the air getting vacuumed out of the bag. When you are satisfied with the amount of vacuum press stop. What is happening is since the bag has a bigger opening for air the machine will vacuum the air out from the bag first. Meanwhile the strip you placed next to the bag will also draw in air. So as long as the machine is concerned it still needs to vacuum instead of sealing the bag. This seem to work great for me. I guess I can put in a pic if anyone want more info. Good luck. Happy vacuuming.....
hi, I'm still really happy with this machine. here are some hints on how to you guys asked for. as soon as i figure out how to upload a pics.
