We wound up ordering their Pro 1100, which has the 11" sealing bar (like most other vac sealers (FoodSaver etc)), as it has the external port for sealing containers and mason jars as well as a roll storage and cutting bar. It is also 4" or so narrower. As we don't process large wild game, we had to decide on which options were more important to us. The Weston Pro 1100 won that decision. Either machine will be a significant addition to any kitchen.
12/12/2013 Update: Almost exactly one year since my last review, my Pro-2300, once again developed the same problem as outlined below. I have been meticulous about its care and maintenance and followed the mfg. directions. The home use for this product was maybe once a week at the most. Dealing with an uncompromising company that tries to blame the end-user and deny any product problems has been irritating. I must have gotten a lemon machine that has inherent design or mechanical issues, so I have dropped my rating to 1 star and would not recommend or buy another Weston vacuum sealer. An apt tagline for my costly and unfortunate experience is this: "Too bad the Weston Pro 2300 vacuum sealer doesn't suck like the company service and warranty."
Bought the Pro-2300 2 years ago after doing research and looking at reviews. The first 1 1/2 years it ran like a wild hog and did everything as reported (5 stars), albeit only with lightly moderate home use. However, it began to fail to kick over into the auto seal mode and you almost had to sit on the handle to get the vacuum started, and even then it was slow; plus about 20% of the bags were not staying sealed. A Weston rep suggested replacing the seals and heat tape. $35 later in repairs and nothing improved. Spoke with a Weston repair technician and was told it was likely the vacuum sensor and exhaust valve were faulty, given the symptoms. Bought $50+ more in parts/shipping and received them with no instructions for replacement. Called again and was told there were no written instructions, but I was sent some photos with encrypted notes that explained what steps to take. Okay, after taking the shroud off, it was apparent that the mother board and several plug-in wires had to be removed, then the circuit turned upside down to remove the exhaust valve screws (the photos did not explain this step, but the rep did after another call to Weston). Not a difficult task, but rather frustrating with incomplete information and trying to work with delicate parts. The good news is that the appliance is working normal so far, however, the initial ace performance has been tarnished by what I believe is premature wear and repair costs for a $400 appliance and mediocre service from the manufacturer. Given these circumstances, I would now rate the machine at three stars.
I snagged a warehouse deal (on Amazon) on this model due to outer box issues. The product was perfect. Here is my assessment:
~ Solid quality
~ Large footprint (I have plenty of space)
~ replacement heat strip with unit
~ gaskets can be replaced
~ See-through top is easy to lift, sits up solidly, and it is easy to see through. VERY STRONG points over other units and FAR better than my last unit.
~Better sweet spot on the chamber because the chamber is wider. (PLUS YOU CAN SEE THROUGH THE LID). (Yes, this is a very positive feature!)
~ Wide, solid seal.
Now to address a few negatives I have seen and offer some tips:
~ no built in bag roll. This is convenient, to be sure! BUT, my cutter had failed after some time. And, my generic bags were folded not on a roll, so that did not do me any good.
~ Tip: An Olfa rolling cutter and a straight edge on a cutting board make quick work of bag making. OR, you can use a letter opener where the razor is nested on the inside. Simply fold the bag over and run the letter opener along the crease. OR you can cut a jagged edge with scissors AND IT WON'T MATTER. Why? Because you can EASILY see through the top--taking all the guesswork about where the edge is. You can see it.
~ Cannot use FoodSaver bags....I purchased the mesh bags from VacMaster (which are great) because I was afraid my generic bags that I used with my FoodSaver would not work given the comments here. My generic bags (which have a mesh chamber in the middle and are smooth on either side of that and smooth on the opposite side) worked perfectly. Further, I had a FoodSaver brand bag and I tested it. It worked perfectly. I'm unclear where the problem lies but I did not experience it with any of my bags.
~ have no empirical evidence on bag failure, but I will update my review. The seal was wide and true, so any bag failure is going to be with the bag and not the unit.
I have no negatives that I've experienced--but I will update my review.
