I’ve been baking sourdough on and off for three years, using only King Arthur Flour until the last the months when all i could get was store brand AP flour. This is gorgeous, silky, fluffy unbleached flour that rivals the best KAF, and produces a wonderful chew and gorgeous dark crust on no-knead/kneaded breads. (Note: bread shown has no added commercial yeast - my yeasty beasties love this flour!)
LOVE the resealable plastic bags save me having to buy containers, and the 10 lb size, which is small enough to keep in the kitchen but in a cabinet unlike the 25lb bags most sell.
The quality is just outstanding. Highly recommended.
***Update*** Still loving this flour so much - I’m baking recently with commercial yeast and the laziest no-knead recipe ever (923g flour, 681g filtered water, 16g sea/kosher salt, 14g yeast), and it’s still perfect.
One thing I did realize: it comes pre-mixed with diastatic malt powder. If you’re baking with KAF or other brands, you can add this yourself - but now I know why the rise and color are exceptional. I used to consider it kind of “cheating” to use this, but it’s pretty stupid when it doesn’t change the taste or texture, but boosts the rise and gives you a gorgeous artisan crust on rustic breads.

I use this for everything that requires flour. I like it better than other brands. Tastes better, has a good texture and this is what I will buy from now on.
