I have A LOT of cookbooks, A LOT. This one is destined to be one of the few go-to cookbooks in my library. The recipes are easy, I haven't found any with ingredients that require me to go searching in specialty stores, and I love the limited number of pots/pans/dishes that have to be cleaned after preparing these recipes. OH and the fact that they are nutritionally sound is just an added bonus.

I LOVE that the serving sizes are specific. The recipes don't just say "serves 4", Ellie specifically states how much each serving should be. "1 pita, 3/4 cup chicken, about 1-1/4 cups vegetables and 2 tablespoons sauce." If you are relying on the accuracy of the calories, or fat, or carbs, this is really helpful!

I LOVE that Ellie provides weights for ingredients like squash that need to be peeled or cut up.

I've made four recipes from the book so far:

Sage-Rubbed Roasted Chicken with Brussels Sprouts, Apple and Sunflower Seeds (pictured) - This was delicious. The sage flavor permeated the chicken. The chicken was juicy and flavorful and the skin was crispy. I loved the cold apples with the hot Brussels sprouts! Next time I make this I'll ad a little blue cheese!

Lemon Chicken with Artichokes Capers and Arugula - You had me at capers! This came together in a snap and that sauce! Yum! I was so excited to eat it I didn't get a picture.

Butternut Squash Soup with Tahini and Crispy Chickpeas (pictured) - Like the other recipes this came together in a snap. I did leave some of the liquid out of the final puree (I used a stand blender, not a stick blender) because I thought it was going to be a bit too thin. I still got a full 8 cups of rich, creamy, savory soup. I did need to add a bit more salt than the recipe suggested and I bumped up the cayenne because we like a little heat. I loved how the nutty flavor of the tahini went with the sweet butternut squash and the crispy chickpeas gave it the perfect crunch.

Herbed Pork tenderloin with Delicata Squash and Brussels Sprouts - Delicata squash has become my new favorite squash. No peeling! And I think it's even sweeter than Butternut. We eat a lot of pork tenderloin in our house and this was a keeper. Perfect fall seasonings of cloves, thyme, rosemary and sage with a little dijon mustard and maple syrup. The only change I'll make next time is I will sear the pork before it goes in the oven just to give it a tasty brown crust and make it look a little prettier.

Also on my list of things I want to make...Chili-Lime Chicken with Corn and Black Beans, Chicken Tinga Tacos, Chicken and Dumplings, and I need to hit that dessert section!
