Those of us that bain-marie (water bath) our cheesecakes no the importance of using a water tight springform pan to keep the water out. Unfortunately, I have yet to find the perfect springform pan and I am tired of using foil and other contraptions to keep the water out! That is why i purchased this pan. Now my cheesecakes come out perfectly done every time. I line the inside of the pan with parchment paper or wax paper, i spray that with nonstick and the cheesecake comes out perfect every single time.
The key is letting your cheesecake cool overnight in the fridge and when you ready, pull of the parchment lining, flip it on to a plate first and then flip it on your base. From here you can dress your cheesecake however you want. I'm telling you it will bump your cheesecake skills up to 1000!
This first time was nothing fancy. I just wanted to get some kind of baked cake under my belt, no pun intended. I used a box mix and added the recommended water, oil, and eggs. I don't have a mixer as such, so I used a tall slim electric mixer that can fit into a tall glass. I used the parchment paper in the bottom of each pan, but I didn't add any kind of agent to keep the cake from sticking. I followed the directions on the box.
The cake turned out perfect. So soft and tasted so good. I must say the cake could not have turned out better. The cakes came right out of the pans when I put a cooling rack over the pan, turned the pan upside down and the cakes each fell on the cooling racks. No breaking up, no crumbs, no sticking at all. The only thing I had to do is to gently pull of the parchment paper. This did not damage the cake in anyway. Everything really did turn out perfect. I used store bought icing because of this being my first time.
Before I used them I hand washed them in hot soapy water. After I baked the cake I looked around the Internet for experiences using a dishwasher for these pans. I found a few places that said they were dishwasher safe and nowhere that said not to use a dishwasher to clean them. So I put them in my regular load and washed them on a regular cycle on the top rack. They came out just a new as when I bought them.
These cake pans made my first time baking a cake a pleasant one I will remember. I'm encouraged to move forward and try making my own mix as my granny did when she made her cakes.
I don't know what else to add in saying just how satisfied I am with these pans.
