I was scared by the reviews that warned of leakage--but as I searched for a better alternative, I noticed that all springform pans were getting such reviews. Wilton seemed overall to have more favorable ratings than other brands, and it was cheaper, too, so I decided to go for it, and I'm glad. When baking my cheesecake I put the pan on a cookie sheet, plus I wrapped the outside with foil, so I was doubly protected against any possible oozing disasters. It worked great! There was one small section that leaked a tiny bit of crust batter into the foil, but there was no large-scale breach. The latch worked smoothly; the cheesecake cooked evenly and released without any sticking; the pan came clean in the dishwasher. The only downside to my concept is that the cooking time increased by 20 minutes (vs. the recipe's prediction of 45-50 minutes), which is substantial--but that's not the pan's fault. I feel pleased with this purchase and am excited to try more cakes with it!
