p.s. I used the spoons in the photo to give sizing perspective.
When I bake a chicken I use foil but my spouse warmed up leftover chicken on it and it didn't stick or damage the pan.
I use steel wool to scour it and it that doesn't scratch it. The reason I tried to scour it is why I gave it four stars instead of five. It turns brown. There's nothing stuck to it, it just turns brown from the oven's heat.
I use the largest one for kneading because it's too big to fit into my small apartment's oven. It's 17 3/4" long and my oven door won't close if I place it lengthwise. Width won't fit either. So the largest pan gets sprinkled with flour and I knead dough on it.
You can't go wrong with Wilton. My mother recommended it, she's a pastry chef, and I've been happy.
Edit: the medium size pan did "pop" and warp in the oven at 450º and no longer lies flat. Still a good pan but the flatness is gone.
Edit for nearly six years after original review. I'm still using these pans. I just used them today, Superbowl Sunday to make some buffalo wings. I use the smallest to make garlic bread. They are brown but they are still perfectly functional. Bravo, Wilton.
