Italian meringue buttercream is one of my specialties and a favorite at our house, so lots of sugar syrup being made for the occasion. Because the temp has to be just right but can change so quickly, a digital thermometer did not work well for me as I could not leave it in the pot without it melting the thermometer itself, messing with the battery (turning on and off in the midst of cooking), or the thermometer timing out and turning off on its own.
This thermometer was especially perfect because of the sliding clip -- it can clip on to my large pot for my really big batches, AND my tiny pot for my small batches (See pictures).
My buttercream has come out beautifully perfect every time, I'm sure in part to the perfect temp readings. Easy to clean, easy to store (flat in a drawer or hanging on the wall). Love it!
