I have every one of Jackie Newgent’s cookbooks. Each one provides a twist on healthful eating, and this cookbook is no exception. Jackie writes in a way that I actually feel like she’s in the kitchen with me. It’s such a personal touch. In fact, I’m such a fan that I’ve purchased this book (and her others) for my Mom and closest friends.
I love that the recipes in this book have the option to be prepared with or without meat (as the title suggests!), especially since I enjoy eating vegetarian frequently—and I often cook for people who want to eat less meat as well. And, knowing that every dish has less than 400 calories is an added bonus! My favorite recipes so far include the Savory Mediterranean Oats, Ancient Grain Grape Leaves and the Tahini-Dressed Roasted Eggplant. They're delicious and easy to make!
I also just had to buy her 1000 low calorie recipes book. And I am going to cook my way through both of these books. I am so psyched that I'm going to take her upcoming class at the NY institute of Culinary Education. Try some of her recipes, you'll see what I mean!
