A really valuable reference. I turn to it particularly for information on vegetables and their cooking techniques, though it covers all other food groups. For simple meals, it has changed how I prepare foods in order to maximize both flavor and nutritional benefit. I would enthusiastically give it a "5" because of the information conveyed, but am downgrading my evaluation to a "4" (it would be a "3.5" if such a rating existed), in consideration of the following.

(1) I have used it for a relatively short time, and the binding is already coming apart. I would punch holes in the pages and put it into a couple of binders, except there is no margin to allow for hole punching. I suppose I could put each page in a plastic sleeve, and put those in several binders, but what a lot of work - it would be over 530 plastic sleeves. The flimsy binding is very unsatisfactory, and part of the problem, of course, is the volume's size, which could be substantially reduced if the repetition in the volume were reduced, which is my second dislike.

(2) Particularly for the vegetables section, which is the largest section (I don't know about the others), there is an enormous amount of repetition from one item to the next. I realize he gives a reason (in each and every item's section) - that he wants that food item's section to be "stand-alone". However, I read the complete section for each vegetable at least once prior to using that vegetable, but when I read the same things repeatedly, it's irritating, because I'm really just looking for information unique to that vegetable.

Kudos to George Mateljan for having the knowledge and culinary inspiration to fill a thousand page cookbook, and the guts to print it – all 5 pounds of it. If you are looking for a comprehensive reference book cum cookbook for preparing the healthiest food in the healthiest way, this it it. This book literally has everything, except for a binding likely to last, (yay duct tape), but the paper is great and it is beautifully printed. The book starts with an overview of the nutritional value of different foods, and how to create smart menus that translate into healthy eating for life. Emphasis is placed on the most nutrient dense foods, explaining the science behind why they are so, as well as different strategies for snacks and trade-offs to keep you on the healthy path while still enjoying your food.
He includes an overview of different methods of cooking, and the best ones to use to preserve the nutrients, and guidelines on the selection of cooking utensils. The book is then divided into color-coded sections where you can see at a glance the sections for vegetables, fruits, grains, fish and so on. Individual foods are arranged alphabetically within the sections, and each section contains an overview of the nutritional considerations for that category, the best way to select, store and prepare the individual items. For example the page or chapter on apples explains why you should eat them, the different types of apples and their characteristics, which ones are best enjoyed raw or which can be cooked, the nutritional profile, how to store them and how best to select them.
I consider myself both a knowledgeable and a good cook, so I was rather surprised to find so much information that was new to me and really valuable.

I bought the first edition of The World's Healthiest Foods a few months ago, and it is the most used and useful book on my kitchen shelf. Each section of the book has complete and easily understood explanations of how to buy, store and prepare the foods that are most easily accessible year-round and world-wide. There is a section explaining the nutritional needs and functions of our cells, one on developing meal plans for healthy eating, one on vitamins and minerals - their sources and function, along with co-vitamins and minerals necessary to accomplish their function in the body. Then there are the actual food pages: each food has a page explaining the food itself and its various forms, how to buy, store, and cook, a page charting ALL the nutrient content (includes all the things not found on food info labels), along with various health considerations (its benefits, any potential adverse effects, such as allergies, and when it may be contraindicated); and finally a page with a recipe and variations on the recipe.

There are just so many gems in this book, that I have probably overlooked some. Just buy the book! You won't be sorry!!

I just bought this second edition as a gift for a relative, and she was very excited to get it after seeing how useful it is to me.

While other nutrition books often state "Studies show . . . . " but do not give a source, Mateljan lists the research done on each nutrient, allowing us to do further study of those that interest us the most. There is no faith healing here, but nutrition advice backed by science that we can use to help ourselves stay healthy.
