At Wusthof we have been make fine cutting utensils for over 190 years. These Come Apart kitchen shears have a wide variety of uses. The Shear can cut anything from string to skin. The handle is designed to open jar lids. Because the shears come apart these shears make cleaning them a brease. This multiuse shear will find many uses in the kitchen.
These powerful 8-inch kitchen shears cut food, flowers, paper, cardboard, even carpet. They're balanced in the hand and work equally well for right-handers and left-handers. Blades formed from high-carbon stainless steel curve inward so they meet in only one place at any given position and cutting action is smooth and exact. One blade's serrations prevent slippage. A plastic cap on the screw securing the blades can be lifted so the shears can be taken apart for resharpening. Steel-tooth insets in the rugged synthetic handles twist open bottle and jar caps. The shears are dishwasher-safe, but hand washing better protects the blade edges. --Fred Brack

I use these for two main purposes: cutting poultry and cutting dog rawhides. Both are difficult to impossible with the new model. The rawhides make an easy side by side comparison. These can barely cut the thinnest ones. The old ones had no problem cutting through medium thickness ones. These are almost useless for my most common uses. They are not good for cutting through breastbone or backbone, and if I have to use a butcher's knife - what's the point of these?
They are super sharp and strong! I love that they come apart for easy cleaning in the dishwasher.
More importantly the rubber hasn't yet begun to disintegrate years later unlike another pair we once had... I can't stand the sticky feeling plastic gets when it gets old!
Beside that, I found the Wusthof much easier to put together after each cleaning. For some reason, with the Messermeiser, putting them together was like a puzzle where I would always have to give it a couple tries before I got them in the correct orientation, whereas the Wusthof, with a virtually identical locking system, I always seem to get on my first try! Go figure.
In any case, I would suggest buying two different-looking shears, and use one for raw, one for cooked chicken, and make one the Wusthof 5558-1. The handle is comfortable; it cleans well in the dishwasher; comes apart easily but only when wanted; looks like a good fit for all hands, large or small, that is to say whether you have larger hands like me or small hands it should be a good size; no left- / right-handed issues as I can see it.
Also, to butterfly (spatchcock) for BBQ: just cut along both sides of the back-bone to remove it and then remove the keel bone. The chicken (or any bird) can be laid out flat for easy, even cooking on the grill (or for the broiler)!
I have had these for 5 years now and just never got around to reviewing them. They are still like new although they get used several times per month.
