I wrote this review because I am about to pass her on to a young family member showing an interest in the culinary arts and started getting all sentimental. lol
If they are still making them anything like they did twenty years ago, buy it.
I have had mine for over 10 years, this one was a gift. I recently cracked the handle of my knife and I sent it to Wustof for repair, they just sent me a new one. Is there a better lifetime warranty than that?
I scoured the Internet and read ALL the knife review blogs. Sure, the Wustoff Classic (let's call it WC8) came up a lot, but many reviews suggested that it may be overkill for the plant based diet.Even Good Eats, while praising the WC8, recommended the Global G2 for a veggie-based diet. So, I tried the Global and various dainty and ornate Asian/Western/Hybrid knives. They all felt awkward in my hand, especially the Global with its sharp bolster (or lackthereof). The WC8 just felt right, like a sword smithed just for me. The balance is impeccable.
So, I got it for a steal on Amazon, it was $40 less than Sur La Table's price, and I got it the next day! It came out of the box gorgeous with a nice edge. A few honing swipes later, she was ready to rock!
I cut the most wickedly even Tempeh strips and Zuchini slices ever... and can it dice onions, please!!!
This one is a keeper. Is it overkill for the cruelty free crowd? Maybe... but it fits my hand like a bionic tofu-murdering machine. With a the right knife skills (pinch grip and and understanding of when and how to rock the perfectly curved blade), this knife will take you places, for a long time! If and when I ever do wear it out, I'll probably be ready for the 10" version, because I like to go hard. Glad I started with the 8" though. A+
This knife cuts beautifully and feels great in your hand. It retains its sharpness and looks good too. In fact, everyone who came to visit during the holidays and spent some time in the kitchen for meal prep, exclaimed (unprompted) how great these knives were. They're unbelievably sharp, cutting through meat, cooked conch, vegetables, fruits, and so much more with great ease.
The splurge on the Wusthof Classic line is well worth it. They have several others, such as the gourmet line, which are cheaper, so be careful when you're looking. The classic line is full tang (blade is forged from a single piece of metal and extends into the entire length of the handle), and are therefore much more durable and feel a lot better in your hand. I'd highly suggest giving lots of thought into getting really great knives, and think about the knives you use most (i.e. if you don't often eat bread, a really expensive bread knife really isn't a must) when making a purchase like this one.
Meals together is a big part of our family, and cooking a meal together as a family when we're all home for the holidays means a lot to all of us. Having a great knife to ease through the long process of preparing a good meal really does make a huge difference. I think this knife will last for a really long time, and am glad to have added it to the collection at home.
