It's sharp! Cuts through stuff like butta'. In fact, I almost lost a nail using it (due to operator carelessness, not the knife's fault).

Wish I would have ordered one of these for chopping and slicing stuff (rather than relying so much on the chef's or pairing knives to cut stuff like veggies) sooner.

Now I see why this is considered a "must have" in any knife collection.

Wusthof are my knives of choice, and this Santoku is my #1 workhorse. Very sharp and it keeps its edge (as long as you're taking proper care of it - hand-wash only and hone it regularly). Most of my knives are Wusthof Gourmet (their cheaper line of stamped steel knives), but for my two most-used ones I upgraded to the Wusthof Classic.

To be fair, if you're looking for a bargain knife, this isn't it. But this is as good or better than any more expensive knife out there.
