This sharpener does a really good job of sharpening the Wusthof knives, and probably any knife that has a similar shape. It takes a little practice to learn how not to gouge the starting spot (where the knife first contacts the wheel) on the knife; with the first wheel (coarse), especially, you must keep the knife moving -- back-to-front, not up-to-down -- to avoid grinding a notch in the blade. The second wheel is finer and less likely to gouge, the third wheel is a strop (pretty much just a piece of leather).

Don't first try it out on your favorite knife.

Don't press hard.

Do let the sharpener do the work (that's what you paid for).

Do keep the knife moving (back-to-front), even before you contact the stone.

It was a little noisier in operation than I expected after watching the demo video (search for it), but it's OK. I recommend watching the demo and carefully reading the instruction sheet.

Use some discretion with the first wheel - it is best for deep reshaping of the knife edge, like if your knife has the sharpness of a butter knife after years of slamming the edge into a cutting board. If you only have some small dullness, try just the second wheel (then strop).

I received this as a present and it works great! It put a new edge on a well used chef knife. I used that knife the day after sharpening it to slice a pineapple. The razor sharp edge easily glided through the husk and core, my thumb and thumb nail. An E.R. visit and 8 stitches later, I can honestly say that this is the best sharpener I have ever used. Big thumbs up!

I really like this sharpener and would have given it 5 stars except for one thing... It is silly that the area in front of the slots where you drag the knife through are made of such a soft plastic. I know why it is soft and not made of metal and that is to preserve the sharp edge you just created on your knife. However, I just wish it were replaceable.

Other than that, it does exactly what it says and your knives will be RAZOR sharp. It really did make my Chef's knife, which already seemed sharp, exceptionally sharp. Same thing for my Wusthof steak knives. It is great to have these little knives slice through steak like hot butter, especially with all the abuse they get constantly cutting on people's plates.

It's a bit pricey, but worth it. After all, if you take care of your Wusthof's, you'll probably never have to buy another knife in your lifetime.

I started a Wusthof Classic set a few months back and got this on May 1st, 2014 to maintain the PTEC edges. This is a great knife sharpener if your only concern is to keep razor sharp edges on your knives, I fall into this category. Lets just say I have some small bald patches where the hair on my arm was effortlessly shaved right off with only a stroke or two at the right angle after using this sharpener. (I should probably stop testing the edge like this, my arm hair does not grow back fast)

That being said there is ONE MAJOR TURNOFF. To those who want to keep their knives looking pristine and shiny, this sharpener WILL cause small lateral scratches on both sides of ANY knife you put through it. My $160 10 inch chefs knife has 20-30 scratches running along the entire side of it. DO NOT FOLLOW THE DIRECTIONS IT COMES WITH. If you do follow the directions and draw the knife flat through the sharpener, it will scratch the sides the worst. I found out after trial and error with my mothers worn down Henckels Classic set (I didn't want to cause more cosmetic damage to the new Wusthof's) that the knife must be drawn back so it engages the grinding wheels but the handle is kept at a steep angle well below the horizontal grinding plane. This minimizes the contact of the sides of the knives with the grinding wheels and minimizes scratching. Remember to always start near the handle and draw towards you so the tip is the last part to touch the grinding plane.

I really only use the stropping wheels to maintain the edge. Maybe once every other week I run the knives through stage two.

My mother's Henckels knives needed to be ground in stage 1, 2, and 3 and I must say the magnetic insert to catch the metal filings is ingenious.

This product does the job it proclaims.
I have tried other sharpening equipment and the Wusthof 3 Stage Electric Knife Sharpener is by far, the easiest and the best.
I've sharpened Wusthof knives as well as several other brands with a full range of hardnesses, all with equal success.
Keep the knife bottomed out in the slot, and follow the directions. It works as described.
The sharpened product is sharp enough to shave the hairs on you arm - it worked for me.
A great bargain for the price.

The Wusthof sharpener is easy to use, and the directions easy to follow. The result is a very sharp knife! However, our sharpener arrived with only three rubber feet - and we had to put a towel under the other corner to keep it from wobbling during use. I emailed Wusthof customer service to order the missing foot, and about 10 days later got a generic reply back that "they were sorry to hear about problems with my knife", along with a detailed attachment specifying how to package, insure, and send my knife back to them. I then called customer service to tell them it was a sharpener issue (not a knife) - and was told that they don't supply parts and that my only options were to package and ship the whole sharpener assembly back to either Wusthof or to Amazon. The missing rubber foot is at most a $0.50 cent part that simply pushes into place, and I think it ridiculous that their fix to this problem is a complicated and expensive re-packaging and shipment.
