Good substitute for gluten
Gluten adds a smooth elasticity to batters and doughs that results in a light and slightly chewy finished product. When baking gluten-free, the addition of xanthan gum can create very similar properties in the baked goods, with none of the gluten.
Thickener for sauces
Xanthan gum is a great substitute for flour or other starchy ingredients when thickening sauces or gravies.

Chocolate Milkshake (dairy-free)
Ingredients:
- ½ cup ice cubes
- 1-½ tablespoons Anthony’s Cocoa Powder
- 2 tablespoons Anthony’s Pea Protein
- 2 tablespoons Anthony’s Erythritol
- ½ teaspoon vanilla extract
- ¼ teaspoon Anthony’s Xanthan Gum
- 2 tablespoons maple syrup
- 1-½ cups unsweetened almond milk
- In a blender, layer the ice cubes, cocoa powder, pea protein, erythritol, vanilla extract, xanthan, and maple syrup.
- Pour in almond milk.
- Blend on high until very smooth.
Prep time: 5 minutes
Yield: 1-2 servings
Blueberry Amla Ice Cream
Ingredients:
- 1 can (14-15 ounces) full-fat coconut milk
- 1 cup blueberries
- 3 tablespoon raspberry preserves
- Stevia to taste
- 1 cup ice

- 1 teaspoon Anthony’s Amla Powder
Instructions:
- Combine all ingredients in a blender and blend until smooth and fluffy.

Chocolate Mocha Brownies
Ingredients:
- 1-½ cups Anthony’s Blanched Almond Flour
- 2 tablespoons + 3 tablespoons Anthony’s Coconut Oil, divided
- ⅓ cup Anthony’s Cocoa Powder
- ½ cup Anthony’s Erythritol or Cane Sugar
- 2 tablespoons Anthony’s Instant Coffee
- 1 egg
- 1 egg yolk
- 3 tablespoons coconut milk
- ¼ teaspoon Anthony’s Xanthan Gum
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 2 tablespoons Anthony’s Erythritol or Cane Sugar for topping
- 2 tablespoons Anthony’s Cacao Nibs
- Preheat oven to 350° Fahrenheit and grease a 8”x8” glass baking dish.
- In a food processor, combine the almond flour and 2 tablespoons of coconut oil.
- Process until a smooth butter forms.
- Transfer to a small saucepan and add the additional 3 tablespoons coconut oil, cocoa powder, and erythritol or sugar.
- Heat and stir over medium-low heat just until melted and mixed.
- Transfer to a mixing bowl.
- Add the instant coffee, egg, egg yolk, coconut milk, xanthan, salt, and baking soda; mix well.
- Transfer to prepared baking dish and sprinkle with 2 tablespoons erythritol or sugar and cacao nibs.
- Bake for 20-25 minutes and cool.
Prep time: 15 minutes
Cook time: 25 minutes

Whereas our preferred ThickIt 2 is modified corn starch (whether they modify by processing technique [something about an electrical 'zap'] or enzymes or chemicals, I don't know) Xanthan Gum is some "sugar building blocks fermented blah blah blah". For us, this doesn't matter.
For my purposes, I made 16oz of what I call "Gatorade Jelly" - it makes his beverage the consistency of thick pudding or slightly 'wet' mashed potatoes or sieved jam. Because the TI doesn't keep the liquid bind as a solid in the stomach, it's a good way for us to add fluids. (He NEEDS a GI tube but they won't because he's developmentally delayed and apparently the DD love to yank their GI tubes out daily. I usually put the 2 cups of Gatorade in a quart container with a screw on lid, add the 1/2c TI and shake violently for ≈20 seconds. Thickness is achieved within a minute to 90 seconds max. With the XG, mixing with cold beverage left white chunks. Had to remove to a blender and blend on high 30 seconds to get rid of the white chunks. Thickening was possibly more immediate than with the TI, but thickening didn't seem to stop. I used maybe 2 tbsp of the XG. Because of the costs and volume, the measures can't be compared by my math-challenged brain. The Gatorade with XG got so thick that I had to use a fork to get it to wash down my sink drain using 135°F water.
For us, that's gonna make the XG a Plan B only in the direst of circumstances.
As far as texture, the XG thickened Gatorade was, in all forms of thickness, slimy. Oral tactile sensitivity isn't an issue for us, but it's a nightmare for many.

This is great and works as it should. A little goes a long way. There's also advice on the back package for ratios in various things, like how much to use when making a salad dressing, or a baking recipe, etc.
My only warning, and this is perfectly normal for all xanthan gum, so it has nothing to do with this product: xanthan gum is slimy. If you blend it in a smoothie, you'll find that your blender might feel slimy, and the measurement spoon you used probably will too, once you rinse it off. This is only really a problem when xanthan gum gets to "clump" in one area, like it could with a blender, or all the fine powder on your measurement spoon. It makes cleaning up a bit more difficult, is all. Although I definitely wouldn't recommend leaving your dish in the sink. Xanthan gum could get very hard to wash off after it settles onto a surface, so just clean up after using your kitchenware and you'll be fine. It's xanthan gum, it's great.
Get some egg whites and toss a teaspoon of this in it and blend.
Make sure the pan is a little oiled and pour just like an omelet.
Use a spatula and spread it out a little bit.
Test out the corner to make sure you can flip and go for it.
Once done, eat up.
PS, Xanthin dissolves in oil, not water. Stir it into the fat first.
