Product Description

A Shocking Discovery! The best low-glycemic sweetener ever has been found! Imagine a certified organic, low-calorie sweetener that doesn't raise your blood sugar and supports immunity and healthy digestion. Move over stevia and agave! Here comes Nature's healthiest sweetener Yacon Root Syrup! Fresh pressed from the Yacon root (Smallanthus sonchifolius), this syrup is a gift from nature that has been enjoyed for centuries in the Andean highlands of Peru. Though packed with sweetness, the sugar in Yacon is mainly fructooligosaccharide, which cannot be absorbed by the body. This means Yacon is both naturally low-calorie and low in mono and disaccharides (less than 1 gram per serving of the sugars that rapidly elevate blood sugar levels). Yacon root syrup has little influence on the glucose tolerance curve and is dramatically less glycemic than honey, agave, or maple syrup. Yacon is a distant relative of the sunflower with edible tubers and leaves. It is commonly grown and consumed from Columbia to northwest Argentina. Yacon roots contain important quantities of potassium and antioxidants. Because of its sweet taste, Yacon roots are eaten like fruit in South America. The Yacon root is considered the world's richest natural source of FOS (Fructo-oligosaccharides). Most other roots and tubers store carbohydrates as starch a polymer chain of glucose. Yacon stores carbohydrate as FOS a polymer chain composed mainly of fructose. This FOS can be considered a subgroup of inulin because it has a similar molecular structure, but with shorter fructose chains. *Note: Our yacon syrup is processed at 140 degrees.

This is the first time I've tried Yacon syrup. As the name implies the consistency is one of thick syrup or molasses. The taste is also like a subtle molasses taste. Unfortunately it doesn't taste very sweet to me so I end up using a lot of it since I like my coffee sweet in the morning. And at this price it's going to be a pricey sweetner. At the same time I ordered coconut sugar and will likely stick with that over this..we'll see. The Yacon syrup does disolve well in hot things - haven't tried cooking with it or in cold things so I cannot speak to that. I like that it is a prebiotic. Would recommend people try if they are looking for natural sugar and sweetner alternatives.

After reading the reviews, I ordered this syrup. I want to add that I have been ordering from several different sites to compare flavor. I just wanted to tell you that this syrup is absolutely horrible. It had a terrible smell and taste to it. Nothing like the other syrups that I have ordered from other sites. I hope this review is helpful to everyone. I sent it back and they refunded everything except shipping unfortunately.

Great product. It's the best Yacon Syrup that I've tried. This syrup helps keep my blood sugars level. I'm a Type II diabetic. Also, it really has helped me lose weight. It has a lot of fiber, etc. in it. I wish was a little less expensive.

I bought this to try because of low glycemic index and all the good things I heard about it, but in reality, it doesn't even sweeten a coffee or a tea, it just gives a hint of malt. For the money, it is not worth it to me unless you like non sweetened food. I will try in cookies or some raw bars, but i doubt it will change my opinion.

I eat a ketogenic 'diet' and this was recommended for being so low on the glycemic index. The carb content is high though and they kick me out of ketosis even if not in sugar form so I was hesitant to try. But, I did and it did not go too well. I made molasses cookies and substituted the molasses with this. Though the flavor was great, only one cookie could be consumed without stomach upset. My son was also very gassy after eating them. Maybe in very small quantities it would be okay. I regrettably did not measure my ketone levels but I won't consume it again to try.
