VG-10 Steel Core
VG-10 is a Japanese stainless steel that is often utilized in high end Japanese cutlery. It has a hardness, or a HRC level, that exceeds that of most other stainless steel cutlery on the market. Its exceptional hardness means that the cutting edge can be constructed thinner, and therefore sharper, allowing the blade to seamlessly cut through almost any ingredient placed in front of it.
Hammer clad Damascus steel
The hard VG-10 steel is clad in a softer Damascus steel in order to give the blade an added toughness and durability. The hammered texture of the blade eliminates friction and keeps food from sticking to the blade.

The reason I am giving only 3 stars is after a year of use the blade has chipped several times, to the point where I am afraid of using it anymore because I dont want a small peice of the knife to chip off into whatever food I am preparing.
Seller responded immediately agreed to replace knife will update when new knife is received.
EDIT: Received new knife, awesome. Although the same thing happened again the wood on the handle warped to make everything uneven not smooth and allow food particles to build up inside where I would only be able to get them out with a very small needle. Unacceptable for use in a kitchen preparing food for others. I have followed all the sellers directions to a T for care of this knife I have never let it sit wet it is always cleaned with dawn dish soap and towel dryer immedietly after each use it has never seen the inside of a dishwasher nor the bottom of a sink I care for it with the utmost respect and for the handle to warp again makes me upset that I chose this brand for my first kitchen knife in this price range. Guess I am going to have to try a new brand next time
I have been in market for a true Japanese handmade western style chef knife. Of course there are lots of chocicea out there but I wanted to make sure I buy the most authentic and best possible knife without breaking a bank, and so I found this knife. Based on my research these knifes are hand made in Japan unlike lots of other Japanese knife which are made in China (Beware). I use this knife for my daily fruit and vegetables cutting, and it works like hot knife through butter. Of course it work well meat as well. It is well balanced and well crafted tool.
So shortly after getting this knife I found a small imperfection towards the edge of the knife by the handle, possibly due to a miss-use. I contacted YOSHIHIRO and they offer to repair it at no cost as one time courtesy. They were prompt in their email response to me. I UPS the knife to them, they fixed it within few days and shipped it back to my at no cost. I got the knife back as good as new.
Over all great experience.
Easy to get a laser edge on it, and simple to retain that edge. Those are the touchstones we look for in the industry.
No more huge gauge German knives made out of tool steel that you have to get a professional to put on a grindstone!
I use a ceramic steel about twice a week on this thing and I can brunoise shallots so small and fine that you'd need a jewellers loop to see them!
As someone who cooks from scratch meals every night, having a sharp blade not only makes cooking easier and more enjoyable but in fact, makes it safer as well. This blade after a few weeks of heavy use has left me nearly speechless every time with it's flawless characteristics, I have knives that cost double this knife but look half as good and hold an edge just as well. Do yourself a favor and BUY THIS KNIFE. Yoshihiro makes true quality products, they have certainly made a new customer for life out of me!
Will post updated review after I put this blade to a whetstone, so far it's edge has held up as well as any top quality knife I have ever used before.
UPDATE 1/2020: After a full year of daily use, this knife has held up perfectly. The only care it's received is occasional mineral oil on the handle and sharpening on a 1000 grit whetstone followed by a 3000 grit stone. This knife can cut today just as good as it could over a year ago when I bought it. At its price point, this is a phenomenal knife.
