Twin Cuisine is the latest addition to the J.A. Henckels family of fine cutlery. This 6-inch utility/sandwich knife is one-piece precision forged, with excellent cutting retention, corrosion resistance, and an exclusive ergonomic handle design. This is
One of the newest premium lines from Zwilling J.A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizontally. In fact, the handle is absolutely stunning, with the shiny tang curving slightly as it courses through the black nonslip polypropylene. With no rivets or gaps, the ergonomic handle provides seamless comfort, while the full tang adds weight for precision balance. The single-piece blade, forged from high-carbon, no-stain steel and strengthened in Henckels's exclusive Friodur ice-hardening process, retains its sharp edge through extensive cutting and chopping. Made in Germany and covered by a lifetime warranty, Twin Cuisine knives are dishwasher-safe but are best cared for when washed and dried by hand.
An all-round general-purpose knife, the Twin Cuisine 6-inch utility does just about everything: dicing ham or cheese to put in an omelet; carving a baked chicken breast into slices for sandwiches; cutting up an apple for a sack lunch. The blade tapers to a very sharp point, perfect for making precise cuts, while the width is adequate for lifting slices off the cutting board. All in all a versatile size and a pleasure to use, the 6-inch utility makes an excellent knife for any seasoned or aspiring chef. --Ann Bieri

A Higher Standard in Knife Construction
Twin Cuisine knives are traditionally forged from a single piece of J.A. Henckelss exclusive high-carbon, no-stain steel formula. The result is a knife with high durability, professional strength, and weight. Twin Cuisine also uses J.A. Henckelss Friodur ice-hardening process, which results in a blade that has excellent cutting-edge retention and corrosion resistance. The blade edge is precision honed and laser controlled to maintain a sharper and consistent blade angle.
New Ergonomic Handle Technology
|The Twin Cuisine handle features exclusive new and innovative handle technology: a full horizontal tang without rivets. High-impact polypropylene is bonded with J.A. Henckelss high-carbon, no-stain steel, resulting in a remarkably comfortable handle with a smooth shape and no gaps. The world-famous Zwilling J.A. Henckels logo is etched on the end of every Twin Cuisine knife handle, indicating its quality.|

Four star for the cutting ability of the knife, One star for the handles,(Because you can't click no stars)
I have been involved with the restaurant industry for some thirty years now as a Chef, management, designer, contractor etc... So I know good from bad when it comes to restaurant products.
About four years ago I decided to purchase a new set of knives. Henckel being one of my top choices, based on previous experience and ownership.
I settled on the Twin Cuisine because I liked the larger handle and overall weight of the knives and the look. Full length tang, no rivets and a more robust design of the handle. I purchased from various vendors on Amazon a compliment of around nine knives of various lengths and cutting styles. I also got two sets of the Twin Cuisine Steak Knives.
Speaking for the knife, (cutting portion) they are a great set of knives. They keep there edge, (as long as you hone them) and I think I have only had to sharpen them a few times over the years.
Now for the handles. Every one of these knives the handles are cracked, not cracking.... cracked. From my 10" chef knife to the steak knives. There is definitely a flaw in the plastic used to mold these handles. I have found references on other forums about this problem with the twin cuisine so buyer-be-ware.
Although they are warrantied for life the hassle is you have to send them in one at a time to Henckel, which frankly I have not taken the time to do, and it can take them up to eight weeks to deal with the warranty.
