J A Hencels 6" Sandwich Utility Knife Four Star Series 31070-163 - The Henckels Four Star line is made in Solingen, Germany, and are forged, not stamped. Part of the Four Star series, this knife is made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster, and a tang that extends to the back of the polypropylene handle, which is permanently bonded for seamless accuracy. Made in Germany, Lifetime Warranty. The 6-inch fine-edged blade on this knife features slightly curved surfaces on both the back and the cutting edge, terminating in a sharp point. The size, smaller and narrower than most cook's knives but larger than a paring knife, makes this one of the most versatile choices for the beginning chef. Part of the popular Four Star line, this hand-honed blade is made with Henckels' Sintermetal Component Technology (SCT), which allows three different grades of steel to be combined to form a single piece, fusing together the blade, bolster, and tang. What does this mean in layman's terms? It means a strong, high-quality knife that will last a lifetime.

Founded in 1731, the J.A. Henckels company is not only one of the world's oldest cutlery manufacturers, it's also one of the most well respected, creating best-selling knives guaranteed to last a lifetime. --Kim Harwell

From the Manufacturer

First introduced in 1976, the Four Star® Series is one of the world's most popular knife lines. Four Star® knives were designed and developed in close cooperation with renowned professional chefs. The result was a fully forged knife with a unique molded handle. The Four Star® line contains knives for all tasks, and includes the following open stock knife types: parer, bread, peeling, sandwich, utility, carving, chef’s, granton edge slicer, santoku, and others. Four Star® knives are also available in a range of block sets and gift sets.

A Higher Standard in Knife Construction

Four Star® knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, Four Star® knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, Four Star® knives use J.A. Henckels’ Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.

It's All in The Grip:

The Four Star® series features high impact polypropylene handles that are permanently bonded to the knife blades without any gaps. These comfortable handles are break-proof, sanitary, and colorfast. In addition, the super bolster provides weight, insures safety, and adds balance.

Features:

  • SIGMAFORGE 1-piece, precision forged construction: Provides perfect geometry, high precision, and improved stability of the blade and steel structure, thus improving cutting edge retention for lasting sharpness.
  • Laser controlled edge: Is sharper and stays sharper longer. Has a more consistent blade angle.
  • Friodur ice hardening: Maximum no-stain properties and more blade strength. Improved resistance to corrosion and pitting.
  • Super bolster: Provides weight, insures safety, and adds balance.
  • Full rat-tail tang: Provides a proper balance and greater strength.
  • High-carbon no-stain steel, an exclusive J.A. Henckels formula: Non-staining, non-rusting.
  • Hand, precision honed blade: Is sharper and stays sharper longer.
  • Bonded polypropylene handles: Comfortable molded handles and food safe
  • Dishwasher safe: Easy care (Although hand-washing is recommended by J.A. Henckels).
  • Full warranty: J.A. Henckels stands behind all its knives.

I own several of the Henckel Four Star (but the Classic line is just as good) knives and have found little reason to succumb to marketing for higher priced knives. Using what I found to be a superior sharpening system (Edge Pro), the sharpness of my Henckel knives rivals the Wusthof and Shun lines (which I tried recently at W-S). Anything over 0.5 carbon is "high carbon" and will sharpen and hold an edge well; the VG-10 is 1.03 but in my opinion is overkill; I purchased one VG-10 and could not get it any sharper than my Henckels, so my son received a gift for his "kitchen".

I have yet found reason or purpose to buy beyond the following edge products (all Henckel but bread knife excluded):
-10" chef's knife
-6" chef's knife
-6" utility knife
-3.5" paring knife
-boning knife (not filet)
-take apart shears
-Granton edge carving knife and fork
+Forschner-Victorinox bread knife (sorry, Henckel)

Ok I did succumb to buying a matching fork, but when you have guests over for dinner, it looks nicer and the fork won't wear out. Anything beyond the regular handle is higher profit for the knife company; if you are holding you knife correctly, you won't need the higher cost handles.

I use both a smooth metal honing rod and a 1200 grit ceramic honing rod ($30 from Edge Pro unless you feel like paying someone more). I use the smooth metal prior to each use; ceramic once in a while, Edge Pro once every 3-6 months and even then only the two ceramic stones (unless the edge became bent on something).

Don't put in dishwasher...stuff bumps together, other dishware thrown on top of the knife, and could damage the edge.

Use only end grain cutting boards...

If you are only going to buy one knife for your kitchen, this is the perfect one. Great for most kitchen activities, sharp, good weight, excellent construction. I highly recommend it.

We bought this knife several years ago, and since then we have been buying other Four Star knives from open stock. This particular one is our favorite knife. We use it daily, usually several times. It keeps an edge, looks good, is comfortable in the hand, and is just the right size for most of our kitchen tasks. Very handy.
Some time ago we accidentally left it too near a burner on our electric range, and the handle melted horribly. Even so, we still use it in preference to any of our other knives including any of our other Henckel's knives. Guess what my wife will get for the next gift I buy her? Yep, this knife. Highly recommended.

OK, I have other Henckels knives, and like them all, but this is the knife that quickly became the one that I turn to first for all but the biggest slicing/chopping tasks. The size of this knife is just right. The blade is a good length for so many garden variety kitchen tasks, and the handle and heft just feel good and solid in the hand. The superior sharpness has been easy to maintain with an occasional swipe on the steel--even after much use. I like and use it so much that I have started giving it as a gift item. Everyone loves it.

I know what the knife is and it is an excellent cutlery item. It is made from steel forged in Solingen, Germany - presumably the hardest steel in the world. It takes little or no honing, only an edge maintenance steel after each use. It has an edge like a razor.

This has become our family's "sandwich" knife. It is sharp and slices thru cheese making nice thin slices perfect for crackers or sandwiches. Slices tomatoes, onions, peppers, mushrooms, cold cuts and layers condiments on bread and slices your sandwich perfectly.
I see my son and husband using this knife a lot. Husband has used it to carve small tenderloin roasts with it into lovely thin and uniform slices and carve out a roasted chicken like a chef.
A fantastic price for a handy kitchen knife that stays sharp with constant use. We do hand wash all of our knives and it does get the steel every other day to help keep that nice edge.

Been buying Henckel knives and scissors for over 20 years. Weve never been disapointed and this is no exception. Sort of a compact chef's knife (which we think a little clumsy), the shape and balance of this knife is perfect for my hand and even for my wife as well, which is unusual. The overall finish and quality is typical Henckel - a lifetime tool, in my opinion.

This is the knife my wife and I use the most. Comfortable grip and well balanced. It is easily sharpened (I've used the Wüsthof 2-Stage Knife Sharpener). We've been using this knife for four years now with no complaints.
