TWIN Signature knives are precision stamped from a single piece of German steel, resulting in lighter weight knives that do not compromise sharpness. The knives are made of proprietary special formula steel that has been perfected for over 280 years. Combined with ZWILLING's signature ice-hardening technique, these FRIODUR blades are harder, sharper, they will NOT STAIN or chip and they retain their sharpness longer.
To ensure an ideal cutting angle, the laser-controlled edge is incredibly sharp and is honed and hand-finished by the most skilled artisans. The three-rivet handle embedded with the ZWILLING J.A. Henckels logo provides optimum durability.
This knife block set carries a useful assortment of standard knives for outfitting a kitchen. The set includes a 2-1/2-inch peeling knife, a 4-inch paring knife, a 5-inch serrated utility knife, a 6-inch utility knife, and an 8-inch chef's knife, as well as a 7-inch hollow-edge santoku, an 8-inch bread knife, and a 4-1/2-inch steak knife. A 9-inch sharpening steel keeps their edges in order, and a pair of kitchen shears to snip herbs, flowers, or string is also included. Everything stores neatly in the attractive natural hardwood block.
The knives feature high-carbon, stainless-steel blades that have been stamped from one piece of metal. The edge is cut by laser for a more consistent angle on the blade and hand-honed for sharpness. Blades have also undergone Henckels's Friodur ice-hardening process, which further strengthens them and protects from discoloration. The ergonomically designed traditional-style polymer handles are securely fastened to the balanced full tangs with three rivets. Handles seamlessly encase the tangs on these knives so no food particles can ever become trapped in a gap. I chose a set with one steak knife and received a set with 6 steak knives minus the utility knives I was hoping for. 2 stars for rapid delivery and for sending 3 knives I could actually use, but the box had previously been opened and the knives it contained were not the set pictured on the box (see photo). Also of note, the block that came with this set could not contain either the items I received or the ones pictured on the box. It had no scissor slot. This is a minor issue though since I planned to keep the scissors in a drawer. I merely wanted to point out that this aspect of the product is not the one pictured anywhere.
I purchased this set as a Christmas gift for my mother. She already owns a set of Henckel steak knives so I thought that this would be a good set to add her steak knives to. I told her I would be returning them shortly after realizing how badly the knives fit in the block.
From what I have learned about this company, Henckel produces knives that are entirely German made, some mixed Chinese and German, and some all foreign. Not sure about the high end blocks, but all the cheap blocks are made in China. Its like Henkel produced these knives, skimped on designing a proper knife block for them, said "F it" and threw them into their mass produced Chinese knife block without a second thought. Shame.
I have owned a couple of the "good ~$100 sets from Walmart" in the past with much better fitting blocks that I would prefer over these knives. That is not to say the steel is better, but overall I would prefer them. One of these sets I have gotten away with abusing in the dishwasher for years with almost no rust or damage to the handles. This is the THIRD set of Henckel knives I have returned. The first two that I returned were differently packaged 15 piece International Classic Sets. One of them was marked down to $79 from a $300 MSRP on Black Friday. The other I paid ~$120 for at Bed Bath and Beyond. The International Classic knives are absolute worthless junk. One of the sets even had errors little errors in how the serrations were cut.
Even the lowest end Wusthoff set will blow these knives away. Victornox knives have a simple functional look to them, but their cutting ability far superior to these knives. In the last three months I have learned more about knives, sharpening knives, and blade steels than I ever thought I would know and these knives just don't pass the test.
