FOUR STAR is the top-selling knife series of ZWILLING J.A. Henckels worldwide. Honed and hand-finished by the most skilled artisans, this celebrated collection is the model of safety, ergonomics, and comfort. Thanks to their seamless transition from bolster to handle, the knives are comfortable to use for long periods of time. The bolster provides the right balance while acting as a safe finger guard. The knives are made of proprietary special formula steel that has been perfected for over 280 years. Combined with ZWILLING's signature ice-hardening technique, these FRIODUR blades are harder, sharper, they will NOT STAIN or chip and they retain their sharpness longer. Precision-forged from a single piece of steel, the SIGMAFORGE knives have an exceptionally sturdy, balanced and flexible blade.
The 8-inch blade on this knife features a curved cutting edge and a blunt back; chopping, dicing, and mincing duties are simplified--and made safer--by utilizing a quick rocking motion on the cutting edge. Part of the popular Four Star series, the hand-honed blade is made with Henckels' Sintermetal Component Technology (SCT), which allows three different grades of steel to be combined to form a single piece, fusing together the blade, bolster, and tang. What does this mean in layman's terms? It means a strong, high-quality knife that will last a lifetime.
Founded in 1731, the J.A. Henckels company is not only one of the world's oldest cutlery manufacturers, it's also one of the most well respected, creating bestselling knives guaranteed to last a lifetime. --Kim Harwell
From the Manufacturer
|First introduced in 1976, the Four Star® Series is one of the world's most popular knife lines. Four Star® knives were designed and developed in close cooperation with renowned professional chefs. The result was a fully forged knife with a unique molded handle. The Four Star® line contains knives for all tasks, and includes the following open stock knife types: parer, bread, peeling, sandwich, utility, carving, chefs, granton edge slicer, santoku, and others. Four Star® knives are also available in a range of block sets and gift sets.|
A Higher Standard in Knife Construction
Four Star® knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, Four Star® knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, Four Star® knives use J.A. Henckels Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.
It's All in The Grip:
|The Four Star® series features high impact polypropylene handles that are permanently bonded to the knife blades without any gaps. These comfortable handles are break-proof, sanitary, and colorfast. In addition, the super bolster provides weight, insures safety, and adds balance.|

So the new knife is going to be relegated to back up duty. I've reground my old knife, and even though it's lost a bit of length I still prefer it to the new version.
The only negative - this couple doesn't probably appreciate how a single 8-inch knife could be so expensive. But after a few uses, I am sure they will.
He gave my partner a $100 set of Henkels knives made in China, all with wretched serrated edges. Yesterday we exchanged it for 3 Henkel "Classic" (below Pro, like this). She immediately saw the difference. Not quite Pro quality, but not the Chinese crap that insults the Henkels name.
I pride myself on the sharpness and the quality of my kitchen (and pocket) knives, and Henckels cannot be beaten by anyone.
They also sell a knife sharpener that has 2 settings, a courser one and a finer one.
All you have to do is drag the blade through it, no pressure on the knife, and it will make old knives new, sharp enough to shave the hair off your arm.
This 6" chefs knife is the best for everything, and I do a LOT of cooking and cutting, I know my knives.
Out of 5 stars, I give this one a 10.
This workhorse knife feels powerful in my hands, and makes me feel confident in my meal preparation. I can see the difference a knife makes in efficiency and quality of preparing meals. I have not had any problems with keeping it sharp. The knife is heavy enough for serious chopping, but light enough for extended use. I did not want to spend a lot replacing all my knives, but after experiencing the quality of this chef's knife, I have added the other Henckels versions of the Santoku, utility, paring, and bread knives to my wish list.
One word of caution: This knife is huge. I received it as a Christmas gift, and even though I asked for an 8" chef's knife, I was given this 10" beauty. I am not complaining, but I have found it to be larger than what I am accustomed to using. Sometimes it can chop into other foods nearby. I figure trained chefs likely do not have concerns, but duffers like me will find this knife slightly larger than optimal for their needs. I also put the Henckels 8" version on my wish list, and once I get it, will use this 10" knife for large cutting jobs and for holiday carving of hams, turkeys, and prime ribs.
