This is a classic French chef's knife, with a broad blade and a curved cutting edge for rocking through a chopping task. The 8-inch blade suits most cooks, though those with small hands might prefer a 6-inch knife, and those with bigger hands might choose a 10-inch one. Classic three-rivet handles distinguish Pro S from Henckels's other quality lines, TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. The steel used in the Pro S line is identical to that of the Five and Four Star lines. High-tech welding of knives this size and larger combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; and a stain- and corrosion-resistant tang. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. This knife, right from the get-go, is a lot heavier than the last knife, with most of the weight on the handle, and the tip of the knife feels very light, in comparison. This actually allows me more fluid movement when cutting and chopping things. Chef's knife always has a special place in my heart, especially the curve on the blade, which allows me to do more and easier than other type of knives that I have.
I guess, now I have to keep this new knife away from my relative, so I don't have to buy a new one, again, in a few months.
The 10" is, at least for my hand and cooking style, just about perfect. It's a bit large for those recipes that only require knifework for a small onion and a garlic clove or two, but otherwise it sees a lot of use. The 6" utility that I have owned and loved for many years just didn't have enough knuckle clearance and garlic smashing surface area, so I figured I'd get the 6" chef and it would fill the gap. I usually use the santoku, but I really do prefer the full bolster. I think Henckels uses the same handle for ALL sizes of the Pro S chef knives, because the 6" chef is a chunky little bugger. The handle is much larger and heavier than on the utility. Also, the blade is only about 1/4" wider than the utility. It would be nice for it to be a bit wider, but it is enough to provide knuckle clearance and enough space for a good pinch grip. It came with a surprisingly nice factory edge (the 10" was way too obtuse and required a session with a large bench stone). The 6" chef thickness is probably 0.030" more than the utility (I didn't put a mic on it, it's just an educated estimate) which may come in handy with the extra oomph I can apply with the chunky handle. Were I to design the 6" chef, it would have a slightly wider blade and the handle of the 6" utility. Otherwise, I am quite happy with it. I will be buying more Pro S knives in the future.
For anyone interested in the Pro S, here are a few reminders. Have a cheap set of leather gloves and a package of steel wool handy. These things come with sharp edges where there shouldn't be. Fixing that very slight issue takes neither much effort nor much time. These knives are not something you have around to brag about (like some people do with kitchen knives). Metallurgically, they are nothing special. They are very traditional and common in design. Let them occupy a quiet corner of your kitchen counter, and save your showing off for the cooking you do with them.
These knives are razor sharp and are holding their edge very well. Their handles are comfortable for my smaller hands and my husband's. We hand-wash all these, and I'm pretty sure they'll be the last knives we buy.
I hesitated between two of the most popular German brands: Zwilling and Wusthof.
After long comparisons, reading reviews and watching videos on YouTube, I decided to buy two quality knives:
- Zwilling J.A. Henckels Twin Pro S 8-inch High Carbon Stainless-Steel Chef's Knife
- Zwilling J.A. Henckels Twin Pro S 4-inch Paring Knife.
Why Zwilling? For the product quality offered by the largest European knife producer and for the highest rate satisfaction of buyers (over 95% 5 stars satisfaction on the Amazon reviews).
I bought them on Amazon.com.
The big deception came when I opened both boxes, and saw that both knives arrived with major manufacturing defects, both looked like they failed the quality test. It looks like fake, made in China.
The 4-inch Paring Knife has one bolster cracked.
And the Chef' Knife because of the handle unequal finishing, the full tang exceeded the upper level of the double bolsters on the whole length handle.
Big disappointment regarding the quality for one the biggest and prestigious European knifes producer.
BE CAREFUL and make sure you get the one made in Germany not China.
Best knife out there Period.
