I read the entire label twice and it doesn't say, but it is delicious soy sauce!

This soy sauce is fermented in the normal way and then undergoes a process to reduce the salt content.

It tastes the same as regular soy sauce, only less sodium where, 1500-2300 should be the daily limit per person, Kikkoman has 870 mg per tablespoon. So it helps keep the sodium intake per day down by about 50%
