Salsa: one sm-med onion, cut in large chunks, 1 handful of washed and dried cilantro, 1-2 hot peppers, cut in chunks, 1 large can diced tomatoes, 1 clove garlic, optional, fresh lemon, optional. Place onion in carafe, chop coarsely, add cilantro and hot peppers, chop into small pieces. I just made a great and very healthy vegetable soup. You could use any veggies you happen to have in your fridge. I put a pot with 4 cups of water with some bouillion powder on the stove (you could use one of the many available types of bouillion cubes as well) While the broth was heating I chopped 1 half celery roo… see more I just made a great and very healthy vegetable soup. You could use any veggies you happen to have in your fridge. I put a pot with 4 cups of water with some bouillion powder on the stove (you could use one of the many available types of bouillion cubes as well) While the broth was heating I chopped 1 half celery root (peeled), one large potato (unpeeled), one carot, 3 kale leaves with stalks. I chopped each vegetable individually and added to the broth, letting it cook while the next one was chopping, so kale last since it requires the least cooking. by the time I added the kale it just needed a minute and I had a delicious soup. After tasting it needed a little more salt and that's all. Advantages: because vegetable are chopped finer then if I did them by hand, they need very little cooking, so more of the nutrients stay intact. - And I can leave the potato skins on (wash well, of course!), preserving their precious vitamin C and other nutrients. The entire process, from beginning to end (including rinsing the Cuisinart Mini after I was done) took 10 minutes at the most. see less I just made a great and very healthy vegetable soup.
