You do not need to close the latch. Better off to use less filling and eat more quesadillas! If you put in too much filling, the machine gets all goo-ed up. Use wetter ingredients, like salsa, afterwards.
Thank you for your question, Richard. There are indentations in the surface that will allow the quesadilla to be pressed into six equal pieces. However, the indentations may not cut completely through your quesadilla.
