You'd just want to make sure it has a Mohs hardness less than the hardness of the marble. According to a countertop website, marble generally has a hardness of 3 to 5. Rock salt has a hardness of 2, so you should be fine.

This is more of a mashing operation than a grinding one. It would be best to use a true coffee bean grinder.
