this is one of the agents used stop/inhibit fermentation. used a few days before bottling

your air lock allows gas (and fluids ) to escape. while keeping the outside environment out. nothing should back-flow into fermentor (but this is why they recommend filling airlock with sanitizing solution. read up on "blow off" tube and vigorous fementation. you should be ok.....you can replace/refill airlock.

The juice is shelf stable and is able to be shipped and stored just like any other fruit juice on the store shelf that does not require refrigeration.

High fermentation temperatures above 75 (ideal temp is 68) can cause some odors, if your pantry is very warm we recommend moving to a slightly cooler place. Normal fermentation can also cause some compounds that can cause an odor which is completely normal but more common with higher fermentation temperatures.

No sugar necessary, this is 100% juice and all you need to make this high quality wine. Some other kits have you add sugar to save them money (less included juice) but our kit comes with the right amount of juice so your wine will come out just like the vineyard.
