Maybe small to medium pans work well, but I have a 12 inch pan I use a lot and I have had no problems using it, might take a little longer to heat the entire pan but it works well. Answer:
Temp range is about 460 at high on one burner, but lower if you use two burners. When you elevate one burner, the burner goes down in temp.

1800 watts at 120v is about 15 amps. A 20 amp dedicated circuit should be fine. If you have other stuff on the circuit, you're likely to have problems.

The owner's manual says maximum weight is 25 pounds. A gallon of water ways 8.345 pounds. 2 gallons of water would be 16.7 pounds. Your large pot with lid probably weighs about 3 pounds. My pressure cooker with lid weighs 6 pounds. You are good to go.

I suppose you could. I mean if you already OWN a 15" griddle then what else are you going to do with it but put it over two burners of some kind? Depends what you want to do I guess. Induction gives great heat control. Of course the heat will be focused over the two burners, but it might be handy to push already cooked… see more I suppose you could. This unit, like all of the 1800w models with 20 settings, achieves the lowest power levels by switching on/off ("pulsing") to AVERAGE the level selected. For example, to achieve 100 watts at Power Level 0.5, the 9600LS will pulse on-off in 3 second-to-11 second intervals, with the 3 second "On" time amounting to about 460 watts. Which, when averaged with the 11 second "Off" time roughly equals about 100 watts. No PIC holds a steady wattage; they all pulse. The Duxtops do this better than most. I don’t know. I’ve had lots of induction cooktops, but I’ve never broken one. I wouldn’t use it if it’s broken.
