The only writing that I see on the box besides the name and description is writing in Japanese. So am not sure where it's made. Sorry

You should only have to clean your knife. The rolling mat is wrapped in plastic wrap.

The only part that is plastic is the "sushi tube" which we don't ever use... the rest is wood (bamboo). As far as what type of plastic I don't know...

You rest the smaller end of the chopsticks on the ducks back where it meets the neck. It keeps the part of the chopstick that you use to pick up the food clean so it doesn't rest on the table. Also to prevent them from rolling off of the table. Plus I think they look adorable. I hope this helps you out.
