Also once you do go back online all recent changes and additions will be updated on your google drive that were made while offline.

Yes, you can work on documents offline. They will be saved to your cloud drive when you get back online.

You can both work on previously saved documents (as long as they were marked as offline files) and create new documents offline. All changes/additions will be uploaded to Google Drive the next time you get online.
