As a jam piece? Can't You Hear Me Knockin' is superior. Rumor has it that the Stones improvised the ending. Mick Taylor's lead sound confident but definitely has an exploratory feel to it. On the other hand Layla was a finely constructed song that was essentially 2 songs put together as the masterpiece we all know. I love them both but to answer the question, the Stones win this round.
