This parchment paper works great for baking. It is conveniently sized for the baking sheets I have so no need to fold up the sides, instead it fit nicely in my pans.

I haven’t used it fo that. I bought it to bake my clay jewelry. However, the paper is very flexible and large. I am sure you could make a pocket out of it to cook fish. FYI I bake my clay at 275 degrees and the paper doesn’t get damaged at all. I can reuse it.
Not sure what they are made of but I’ve used quite a few sheets baking cookies and nothing ever sticks. I really do love these sheets.

I had no trouble fitting this parchment into my 9x5x3 inch loaf pans, while baking sticky fruit cake. I did lightly spray the pan with PAM before centering the parchment sheet and pushing down and firmly into the corners. The slight moisture of the spray helped to "hold" the parchment into pan and not have it spring out prior to the batter going in! I had no trouble lifting the cake from the pan with the excess parchment paper left above the rim!

Absolutely. It provides a wonderful non-stick surface for anything baked at 425 degrees or lower. Much better than spray on oil! You're baking macarons? I'm jealous.
Yes this paper is amazing for use in baking and leaving the edges hanging I've never had any problems with the paper burning.
Yes. It is safe up to 450 F degrees. I have had good luck with the parement paper in baking.
Saves pans and clean up but I think also produces a better baked good. You don't get and transfer of past flavors from anything you might have made last time! Not saying that happens but for sensitive palates it happens!!! Hope that helps with the question.

I see nothing in their specs, but I have baked baguettes on parchment paper at 450 F, and it holds up OK

Not sure what you intend by this. The product is just simple parchment paper like the kind bakers use on cookie sheets so they don't have to wash the sheet after every use. Great for baking on and protecting your metal ware. I also use this to line the bottom of a bird cage instead of newspaper.
