These are a product of Greece and are just as they say, 4 lb of the kalamatas, water, salt, red wine vinegar, and extra virgin olive oil. As reviewers state, these are pretty salty (we like them as are but you can rinse them in water if you prefer less) and quite flavorful.
We moved a jar to the fridge and put the rest in the mini-fridge. The container doesn't state whether they need to be refrigerated but if the brine level is high after you draw a jar out, you're probably fine just adding a bit of olive oil to coat the top. I read in the Q&A section here that they are best stored at a cool, consistent temperature (based on the response with manufacturer's email quoted, thank you!).

After opening, I put the plastic jar in the fridge. However I saw a clever idea online for freezing olives via muffin tins! I experimented with freezing a small portion in water in a muffin tin cup and the next day, thawed it by running hot water over it. It worked! The texture seemed the slightest bit altered but nothing that will keep me from freezing a bunch this way. (I will be most unhappy if I leave them in the refrigerator and they eventually go bad.)
The idea is you freeze them in muffin tins and once frozen, pop out the little olive blocks and keep them in a freezer bag for future use. If you want to do this, I'd suggest that you do as I did and initially try freezing just one little portion to ensure you are satisfied with how they taste once defrosted.
EDIT May 2017: The first two orders I placed were great but something was wrong with the third. I'm fortunate I had the good ones first so I know how they *can* be. The third order arrived leaking a bit. When I removed the top, a plastic "screen" was pushed down below the lid on one side. After I extracted the plastic piece I saw that the olives themselves looked off and there were whitish particles floating in the brine. I've seen similar in other brands' green olives when they sat in the refrigerator unused for too long. The smell was also too strong, very vinegar-y. I went ahead and tasted two olives. They were not up to the standard of my previous orders and left a bad vinegar-y aftertaste. Vinegar of course is used in the brine BUT in this instance I wondered if excessive vinegar was used to try to mask olives past their prime. In any event I will not eat these unpalatable olives. (I have a photo of them and will try to add it to my review.) Because of this shipment I have changed my rating from 5 stars to 3.
Win! They are in beautiful shape and I'm really surprised they were as cheap as they were! Tasty, perfect morsels, perfectly pitted and brined, these are going to be on subscription.
Some say they're really salty, and while they are a bit salty, my opinion is they are normal in that regard, no need to rinse.
I like to take a small Ball jar and fill it with the olives which I remove with a large slotted spoon leaving the brine behind in the jug.
I then take 4-8 whole, peeled cloves of garlic, slice them in half , place the halves down in the olives and then fill the jar with a good Olive oil (doesn't take much with these, they're small and take up lots of jar space.
After even 1 day in the fridge they taste amazing, mellows out the sharpness of the Olive just a bit and adds a wonderful dimension flavor while leaving the Olive flavor front and center.
