SAMPLE RECIPE: Baked Berry Oatmeal

SERVES: 12 // PREP TIME: 15 minutes // COOK TIME: 4 to 6 hours

Baked oatmeal contains eggs and milk, so it will set into a mixture that can be cut into squares. This recipe resembles an oatmeal cookie, but it’s much better for you. Serve it with some maple syrup or honey drizzled over each piece.

Instructions:

1. Grease a 6-quart slow cooker with plain vegetable oil.

2. In a large bowl, place the rolled oats.

3. In a medium bowl, mix the eggs, almond milk, coconut oil, honey, salt, cinnamon, and ginger. Mix until well combined. Pour this mixture over the oats.

4. Gently stir in the dried blueberries and dried cherries. Pour into the prepared slow cooker.

5. Cover and cook on low for 4 to 6 hours, or until the oatmeal mixture is set and the edges start to brown.

VARIATION TIP:

Leftovers of this recipe can be crumbled on top of yogurt for breakfast. Try it with plain Greek yogurt and add some sliced strawberries or blueberries for a great start to the day.

INGREDIENTS:

  • 7 cups rolled oats
  • 4 eggs
  • 1 1/2 cups almond milk
  • 2 tbsp melted coconut oil
  • 1/3 cup honey
  • 1/4 tsp salt
  • 1 tsp cinnamon, 1/4 tsp ground ginger
  • 1 1/2 cups dried blueberries, 1 cup dried cherries

I have also written articles for Woman's Day magazine, my recipes have appeared in 'Quick and Simple' magazine and 'First' magazine. I have also been a columnist for 'First' magazine. I have worked for the Pillsbury Company since 1987 and have been a home economist for the Pillsbury Bake-Off contest since 1988.

For us there are numerous recipes that sound delicious.However, the first one we tried, Gingered Porkchops well, I should have went with my gut feeling - the recipe doesn’t call for enough liquid. The pork was dried but tasty. The sauce did taste delicious over Asian brown jasmine rice. Glad it was a read from kindle unlimited and not a book purchase. The recipe will be tried once again with an extra cup of broth.Future recipes, we will go with our gut instincts.

When I got my slow cooker I had no idea how to cook in it. I was confused with the portions and the timing. This book was a great introduction to cooking healthy delicious food with a slow cooker. The recipes are easy to make and healthy doesn’t mean that the flavor is compromised, it just means that they are low in salt and oils. The recipes give about 8 servings, which is great for families. My favorite recipes were the herbed pork loin with fruit, the salmon ratatouille, the Thai pork with peanut sauce, and risotto with green beans, sweet potatoes and peas. You will feel like a professional chef once you start cooking with this book.

Good receipt ideas however the few recipes I've made so far weren't my favorite. BUT I think that's because I don't know what I'm doing with my new crock pot and I wanted an inspiration for recipes - not necessarily going to stick with clean eating.

I've only tried one recipe so far, so I don't want to knock the product to much. That said, the food was bland. Reading through the other recipes, I now plan on adding herbs, various peppers, and etc to add flavor in the future. It will be an "idea book for days that I need a set it and forget it meal." If your not a cook and want a book that you can follow the recipe exactly (and turn out tasty), I'd recommend another book.

Love this book!! The broths were easy to make and they tasted so much better than store bought. I have made 8 or 9 recipes so far and my kids loved them all. No weird ingredients, just a simple easy meal!

Really enjoying this cookbook. I think they could have done a better job on the index. Recipes can be difficult to find in the index. But we have been enjoying the recipes.
