- Reviewed in the United States on August 10, 2019Adding oat to the konjac in these shirataki-oat fettuccine noodles mostly solves the problem of a too-bouncy texture and a seaweed smell and makes it possible to forget that these are not conventional pasta, are almost completely devoid of carbs, calories, etc., and are basically fiber. Although they're quite pricey, they're definitely not as expensive as the very few similar types made by other brands, and they're also organic, and the quality is great! Thanks so much for giving keto/paleo-dieting and diabetic folks a great option so we don't all have to miss the carbs we're forced to skip. I'm grateful for the variety of shapes, too -- especially fettuccine. I can only hope you never stop making these!!
UPDATE: I've been a total devotee of this brand of pasta, but I'd never tried the rice-shaped variety until recently. It's amazing!! It isn't "bouncy" at all, but is soft and fluffy, and it comes closest to replicating real rice without the carbs of anything I've ever tried (including riced cauliflower). Fantastic stuff!! Now I have a new "addiction."

- Reviewed in the United States on June 25, 2020If you are like me and you LOVE pasta but your body and metabolism says "no, nada, niet, don't even think of it, all the carbohydrates..." Then this product is for you! Whatever you would make would regular pasta you can do it with this product and feel good about it and even lose weight while enjoying it!
Unlike many others, this product has a much more natural like a real pasta color, larger portions and each package contains 2 separate sealed well sized portion bags. My preferred choice of Shirataki noodles. They also have a much fainter "fishy" smell prior to rinsing, but also a more pleasant faint flowery fragment undertone, better texture and product item size which comes in 4 different styles: Rice, Spaghetti, Fettuccine, and Penne.
The often mentioned slightly referred to as "fishy" odor is natural and has to do with the konja root of which the Shirataki is made and is easily (as required) rinsed out in cold water in less than 20 seconds prior to cooking.
Boiled for a couple minutes and water and served as you would serve regular pasta, any shirataki are "crunchier" than "al dente" of conventional pasta with a slight "silicone rubber like" resistance in texture. If you ever ate a jellyfish or jellyfish salad, then you know what texture I'm referring to. Slightly "gummy" resistance but with a crunch. Similar to biting in a cucumber that is a few days old but still good. Softer but similar to the texture of Wakame, Japanese seaweed salad, is another comparison.

They're soft, but never going to be wheat-pasta-soft, as the amount of fiber in the konjac alone makes that impossible. With patience, the texture can become less of an issue, but you shouldn't go in expecting Chef Boyardee mush. The only issue for us is the amount of nonrecyclable packaging, which isn't ideal–3 different plastic bags for 4 servings is too much.

There is no funky smell when they come out of the package. The texture is a tiny bit rubbery but not too bad. They don't have a lot of flavor on their own but if you follow the package directions, drain them well, squeeze put the excess water and let them sit in the sauce for 15 or 20 minutes they readily take on the flavor of the sauce. (Kind of like tofu) I've served them with shrimp scampi and as a side dish, tossed with basil pesto. You can't beat these. They have a dash button on my account!

Item was spoiled smelled and tasted horrible, and we used it just 8 days of receipt. Contacted Amazon and company immediately neither of them will refund me back for a spoiled product.

Yes the smell is weird, it was earthy, but once rinsed and added to the pot there was no longer a smell at all. I did not cook it separately, I simply added it to whatever sauce, after rinsing it, and cooked it that way. The texture is not that of pasta, but hey, this is not wheat flour. Anyone on a Keto or gluten free diet has to get used to different textures anyway and it includes these noodles. Not chewy, but different. My hubby n kids ate and enjoyed each dish, as did I, so no complaints here 😀
With the rice shaped pasta I made a veggies stir fry with pulled rotisserie chicken breast, then added half cup broth and some cream and parmesan cheese and simmered until reduced. I added a teaspoon of coconut oil to my portion and it was amazing. Will add to the whole pot next time 🤤
With the spaghetti I made a bacon n beef bolognase sauce, yum. And the fettuccine I made a chicken/bacon carbonara Alfredo sauce w veggies. Just about to order more, can't wait to try new recipes including Korean chapchae with bulgogi 😋

Second Edit: This was the 17th time ordering this product. I got another bad batch. I can't believe that the company has not yet implemented a better quality control in their factory. This batch of shirataki fettuccine looks and tastes like a pile of rubber bands. Completely inedible. I expect that the Amazon representative will give me a refund for this inedible product as they have in the past. When the fettuccine is not defective, I find it a satisfying very low-carb and very low-calorie substitute for pasta.
Original: This was the sixth time that I ordered LIVIVA Shirataki Fettucine. I ordered 6 bags as usual. Two weeks ago I would have given it 5 stars. I loved it. Really great for very low-carb meals. But this time, only one bag was normal and edible. The texture of the defective servings is difficult to describe -- another reviewer said it was like eating dental floss, that is a pretty good description. Simmering in chicken broth for one hour (to make chicken noodle soup) -- did not change the texture, did not soften the noodles. Of the 6 bags, seven of the twelve servings were inedible. Five of the twelve servings were fine as usual. Edit: I was given a refund for this defective order by an Amazon Service Representative. I will order it again, since my first 5 orders were fine. Hopefully, but the time I order again, the defective batch will be gone from the stocks.

Order was for 2 packages and the first one was great. Stored the 2nd one in a cool dry dark cabinet and somehow it turned to mush in 6 weeks since then. The expiry date is not until 08/29/19 so not sure what could have gone wrong....... disappointing.

I read a few reviews about those noodles and as much as there is nothing wrong with them per se and I am sure they are low to no carb in themselves, the reviews describe them not as they are.
they do not change their texture or softness/toughness at all no matter how long one cooks them.
they do not absorb any flavour whatsoever. They stay flavourless not matter what.
their consistency reminds me of a really tough, uncooked squid. Rubbery, squishy bordering on slimy.
That said they are as described. I was kind of hoping for a better tasting product and it is not any fault of the manufacturer.
