Preserving food and curing meats is vital knowledge for early humans who were, by nature, hunter-gatherers.

My grandparents own and run a deli. In fact, pretty much my whole family is involved with the business. They intend to pass the business on to my cousin when they retire. My grandfather has been in the meat business as a butcher and deli owner for decades, learning the trade from his father and other relatives from Italy.

This book is awesome. It has everything in it from smoking meat to freezing it to extending its shelf life. I can't wait to get started. Everything is broken down so well in this book. It is easy to follow and understand.

I'm a 60 yr old Cherokee and remember the elders doing these things but I never took the time learn and that knowledge was lost when the elders passed. When I saw this book it was a no brainer! The book is well written and easy to understand. Just wished it had smokehouse plans 😁

Bought for my husband. He reviewed it and the book is to basic for his needs. Good book for beginners.

Definitely a book worth reading for preserving different types of meat. I like that the book doesn't solely talk about only beef, instead it discusses multiple kinds.

Book was ok but I thought it lacked in detail on how to preserve meets the old fashioned way is what I was really looking for so I didn't really learn anything that I already knew. So if you have zero knowledge about meats, then this book would be a starting point at best.

You’d think there would be actual detailed instructions given the title of this book, but unfortunately most of what this is is simply the authors somewhat vague ideas. There are no detailed step by step instructions for anything. Sadly, I’ll be returning this and searching for a book with better instructions and detailed photos.
