- Reviewed in the United States on January 5, 2025Size: 12" Frying Pan Skillet with HandleVerified PurchaseDon’t get this if you’re expecting a relatively user friendly replacement for a nonstick pan. That’s NOT what this is. Figured the season this pan ships with would last and strengthen over time - nope. It broke the first time I tried to make turkey burgers on it. I figured it was my fault because I failed to realize you can’t cook anything acidic on it (strike one). Spent lots of time reading up on how to season these pans and did it several times trying different methods. Even on low heat with plenty of oil or butter in the pan stuff like eggs would still stick (strike two). Then today I figured I would try hamburgers. My seasoning broke immediately. Strike three, you’re out. This thing is going bye bye. Pans like this should ship with ample and specific documentation on how to maintain them, and not allege that they build up their own nonstick coating over time when the most mundane home cooking can easily break the seasoning. I don’t need a pan that is basically a part time job to maintain up to basic usability.

- Reviewed in the United States on June 27, 2024Size: 10" Frying Pan Skillet with HandleVerified PurchaseI avoid non-stick cookware like the plague and prefer carbon steel, so I bought this one because it said "pre-seasoned" in the description and a certain product testing organization I follow rated it highly. As soon as I washed it right out of the box I could tell it was not seasoned with heat and oil, the water beaded up too easily. It felt and behaved exactly like a non-stick coating.
So I contacted OXO, who directed me to the manufacturer (they don't make their own cookware), The Cookware Company. From there I drilled down into Green Pan, one of their subsidiaries that makes the OXO pan, whose claim to fame is a "non-toxic ceramic non-stick coating". They claim it is non-toxic because it is made of a ceramic derivative of sand, and the manufacturing process doesn't use PFOA or PFAS chemicals.
That's lovely, but I have no reason to believe it is safe other than their claims. A little bit of research into "non-stick ceramic coatings" revealed that they are made with other, potentially toxic chemicals, and I couldn't find any published studies on their safety. I'm giving it three stars because it's a well-made pan, it certainly feels solid and sturdy, and the silicone grip on the handle is nice, but I don't trust it for cooking my food, especially when they deceptively call it "pre-seasoned" instead of "non-stick". Are they hiding something? I'll just stick to my good ol' oil-seasoned carbon steel wok.
- Reviewed in the United States on September 28, 2022Size: 12" Wok with HandleVerified PurchaseVery happy so far. Earlier bought the oxo outdoor version. Liked it a lot, so got this. It is preseasoned so don't need seasoning immediately but would need as it ages. My outdoor version has aged well and I learned how to season on it.
Using it on electric stove, works ok. As others mentioned, the carbon steel isn't for everyone. You need to manage heat well and season it regularly to maintain nonstick surface (patina). These can take very high heat but it can burn your food too, especially on electric stoves where heat won't go down quickly. So it gets more tricky.
After stirfry or cooking moist items, wash gently if needed, heat dry followed by full oil coating is a must on all exposed steel portions. If you miss out applying oil on handle or sides or bottom, those areas could rust. Most negative comments here I see are due to improper usage. If used appropriately, the results are excellent for stirfry anything or crispy dosa / pancakes etc. Just like cast iron, only lighter and easier to handle after use. Don't keep cooked food for too long in the pan, especially if it is wet. Common sense, iron rusts if exposed to water. Never soak in the sink. Quick rinse, scrub if needed, heat dry, apply oil. That's it.
Also, note that carbon steel isn't for cooking all types of food. Especially acidic ones like tomatoes or tamarind or yogurt in the recipe. There stainless steel shines. We don't use nonstick cookware anymore.

Size: 10" Crepe Pan with HandleVerified PurchaseTerrible quality! Two months of use. Description says more use: This pan naturally develops a non-stick patina over time. Tried to fry a fish, lots of oil - didn't help. Hard to remove residue. Had to use a steel tool. Very expensive for that poor quality.

Size: 8" Frying Pan Skillet with HandleVerified PurchaseI have been a Stainless Steel cookware with occasional use of nonstick so this was my first use of this type of frying pans. Well… I must say I am converted, this is like cast iron and nonstick pans had a baby, great use. Oxo brand is great and the finish, weight and usability is phenomenal, thanks!

Size: 12" Frying Pan Skillet with HandleVerified PurchaseAfter cooking my first steak with this frying pan on the induction stove top, the steak we not cooking evenly. Also, part of the steak got stuck on. I could not remove it. You can see the discoloration on the reverse side of the pan of where the food got stuck. I did not put the stovetop any higher than level 8. The rest of the pans discoloration is normal as it is explained that this is supposed to that way when you use it. I returned the Obsidian Pre-Seasoned Carbon Steel, 12" Frying Pan and purchased the OXO Professional Hard Anodized PFAS-Free Nonstick. Maybe this works better on a traditional stove top.
