Cauliflower Pizza Crust

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

2. Break the cauliflower into florets and pulse in a food processor until fine. Steam in a steamer basket and drain well. (I like to put it on a towel to get all the moisture out.) Let cool.

3. In a bowl, combine the cauliflower with the mozzarella, Parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into a circle, resembling a pizza crust. Bake for 20 minutes.

4. Add desired toppings and bake an additional 10 minutes.

This book goes into more detail about the Lean and Green diet. The opening looks at what the diet is, what its goals are, and who would benefit from it the most. Then the author goes into detail on what the diet entails and the different ways you can follow the diet (like 5 & 1 or the 4-2-1 way). Then we get into the recipes. The ones presented are meant to fuel the body but also stay within the parameters of the lean and green diet. So, you will see breakfast recipes that are meant to make you feel full but also be nutrient dense. After the recipes there are meal plans for the most common ways to do the lean and green diet (the 5 & 2 or the 4-2-1) Overall, this book is very helpful.

I love how informative this book was. The recipes were great. Unfortunately a lot of nuts & peanut butter recipes which I can’t use. I love that there are 2 versions of Lean & Green Diet. I’m looking forward to trying some of the recipes out! Enjoy!

I bought the Kindle version of this cookbook. I wish there were more pictures of the meals. I also don't understand how these recipes work for a beginner in the Lean & Green 5&1 program. Seems like there is more food, etc. than what is allowed. I did just start the program and have more to learn, I thought this cookbook might help, but now I'm not sure. Time to reach out to my coach.

This book goes through the basic ingredient list to maintain a lean and green diet. The recipes are varied and most are simple enough for even the biggest novice in your family to prepare. Overall, this is a useful book for anyone looking to take care of their health.
