The author does a good job of not only explaining the science but also walking you through the process step by step, from what you’ll need even going into great detail about what types lids to use for jars as keeping air out is crucial to the process. This book is thorough, even educating us on how to pick out quality vegetables taking into consideration firmness, aroma, weight etc.
Then you get to the actual fermentation recipes which list the ingredients and instructions - it couldn’t be easier and the variety of options is plentiful!
If you’re looking to get into vegetable fermentation, I highly recommend this book!
The layout of the book is done with great thoughtfullness, making each following chapter almost intuitive. I would be very hard pressed to find anything that is missing in this masterpiece of a book, and I am looking forward to see if he comes out with a series. Bravo! Well Done Sir!
