I do a little bit of pickling and fermenting, but this book really pushed my skills up to the next level. I would highly recommend this book to anyone interested in learning or expanding their pickling/fermenting skill. Lots of great info and recipes to really get you started.

This book includes tons of reading about the ins and outs of fermenting and pickling. I was looking for more recipes with helpful information, but there are just a few recipes, and the ones that I have made from the book so far didn't turn out great.

The Fermented Vegetable book is a good book for anyone trying to learn the basics of fermentation. It is straightforward, easy to follow and has quick recipes that don't require a lot of steps. What's great about this book is it gives you the basics and with that knowledge you gain greater confidence in your fermentation journey to experiment.

As a beginner to fermenting vegetables, this book was great. While I knew that fermented foods such as kimchi had a lot of beneficial bacteria and probiotics, it turns out that the benefits of fermented vegetables goes beyond just gut health, extending to areas such as liver support, waste removal, heavy metal binding, improving insulin sensitivity and reducing inflammation just to name a few that were mentioned in the book.

The author does a good job of not only explaining the science but also walking you through the process step by step, from what you’ll need even going into great detail about what types lids to use for jars as keeping air out is crucial to the process. This book is thorough, even educating us on how to pick out quality vegetables taking into consideration firmness, aroma, weight etc.

Then you get to the actual fermentation recipes which list the ingredients and instructions - it couldn’t be easier and the variety of options is plentiful!

If you’re looking to get into vegetable fermentation, I highly recommend this book!

This is the second book I have read from this author and I genuinely enjoy and appreciate these books! This book has the phrase "the ultimate guide" in the title, and it absolutely is! It unpacks the history and the why's of fermenting, which offers a better level of understanding. From there, it walks you through step-by-step processes and offers a ton of guidance to ensure a successful experience (or a learning lesson) in your kitchen! I definitely recommend adding this book to your bookshelf!

Oscar Higgins is a passionate teacher and an artist. He has delivered what I would consider the final word on fermenting all vegetables. His descriptive explanation of the craft of fermenting leaves no stone unturned. Starting out by giving a comprehensive understanding of the science of fermenting, he then delves into this mouth watering craft. His passion for this alchemy not only feature the health benefits of fermenting, but also reminds you of the cross-cultural nature of fermenting. His recipes are very well written and easy to follow, which encourages you to get up and start pickling some veggies. The various forms of fermenting is very thoroughly explored in this book and it is done with a very clear and refreshing tone.
The layout of the book is done with great thoughtfullness, making each following chapter almost intuitive. I would be very hard pressed to find anything that is missing in this masterpiece of a book, and I am looking forward to see if he comes out with a series. Bravo! Well Done Sir!
