From start to end of harvest, prepping for the new harvest of wasabi root. Why don't Sushi restaurants offer real wasabi root here in the US of A? Well, after seeing this short look into what it takes (18 months) to grow real Wasabi root we can just imagine the price is excessive. Here we see how wasabi is planted in gravel of a running stream, receiving water from near by snow melt and then heated in the growing beds by thermal activity to the exact temp (55 degrees) wasabi grows best in. We see it harvested 18 months later, cleaned and the leaves are also harvested and sold, the actual root ready to ship. Finally a Sushi chef is seen using a special shark skin grater (would not go over so well here in the States I think) to turn the wasabi root to a fine mushy consistency and offered to the customer. What is missing is how much is it sold for, are their other graters that can work instead of shark skin, can wasabi root be stored and or how long after harvest can it be kept?

Overall, a very good segment on growing wasabi and it's use we all know about except what we get in a sushi restaurant is not at all wasabi but some horseradish mixed with food coloring and what ever else is in their to make it seem like wasabi. I bought some real wasabi root on line and there is a world of difference from the fake stuff and the real root, no comparison but I paid $65.oo for half a pound. I took one of 4 small roots I received into a local sushi restaurant and they did not even know what it was and did not have the proper grater when I asked them to prepare it for our meal. I think it would be something Japanese Restaurants, even up scale American restaurants would want to add as a possible selection to their menu's one day.

I like that the episodes chat with workers and owners. That gives the show a bit more depth than How It's Made, which just has a narrator.
