- Reviewed in the United States on September 12, 2016Garden writers like me have long known of the good work done by Dan Jason with edible legumes like peas, beans, and lentils. If you want to grow an unusual temperate-climate pulse crop, Dan’s seed company, Salt Spring Seeds, will get you started with their carefully curated collection of varieties.
Unfortunately, garden writers like me also have little first-hand knowledge of how to grow chickpeas or lentils, and few of us have had the pleasure of growing, harvesting and storing our own peas and beans for year-round eating. This book fills an important information gap on growing these and other pulse crops, and it is the best source I have seen on drying, winnowing and storing these edible seeds.
The book’s subtitle suggests that eating more protein-rich legumes can help save the world, a dubious claim until you see the recipe section developed by coauthors Hilary Malone and Alison Malone Eathorne. Who would have thought of adding pureed navy beans to pumpkin pie to boost its protein content and creaminess? I think I could survive quite nicely on a daily ration of the Malone sisters’ Picnic Bean Salad with Poppyseed Dressing. Directions are included for grinding your own flours from pulses to use in gluten-free baking, along with Dan’s personal method for taste-testing beans: Cook them plain, sample a few bites, and then move in with seasonings or sauces.
Stunning photographs throughout the book showcase the natural beauty of these food crops, and provide the reader with a rare glimpse of what chickpeas or lentils look like on the plant. Dan’s threshing process if fully illustrated, too, but it is the beauty of the plants themselves make The Power of Pulses a pleasure to read.
