Curry leaves

The curry tree (Murraya koenigii) is a tropical to sub-tropical tree in the family Rutaceae and is native to Asia. its leaves are used for both medicinal and culinary applications. They’re highly aromatic and have a unique flavor with notes of citrus.

Aside from being a versatile culinary herb, they offer an abundance of health benefits due to the powerful plant compounds they contain. Curry leaves are rich in protective plant substances, such as alkaloids, glycosides, and phenolic compounds, that give this fragrant herb potent health benefits.

Research has shown that curry leaves contain many compounds, including linalool, alpha-terpinene, myrcene, mahanimbine, caryophyllene, murrayanol, and alpha-pinene.

Many of these compounds function as antioxidants in your body. Antioxidants play an essential role in keeping your body healthy and free from disease.

Fresh curry leaves aren't so easy to come by unless you live close to Asian markets. They don't freeze well nor do home dehydrators create a useable product. However these dried leaves retained a good deal of flavor and I'm very glad to have them on hand. When I first opened the bag there was definitely a wonderful aroma. I decided to keep them in the fridge to better preserve them and I think I succeeded in maintaining their shelf life.
I used them to make poha chivda, an Indian snack and the flavor was fine. Of course using fresh would be preferable but these were a great substitute.
