protien skimmers

I just started a 30 gal saltwater aquarium and have under-gravel, canaster and protien skimmer with bio material. I have 6 fish (2 clowns, 2 yellow tail damsels and 2 blue damsels.) Its a new tank and I dont expect the protien skimmer to pick up much...but when it did it flooded the catch container. It also changes every time i feed the fish or add anything to the water like amonia clear. does anyone know if this is normal or should i look for another skimmer.

under-gravel, canister, and protein skimmer? 5-10 years ago, people were moving to
live rock/live sand with a protein skimmer. Under-gravel and canister filtration went
out well before then unless the hobby has come around again. Even with fish only,
the under-gravel and canister filters are nitrate factories. I'd do, fish only with live
rock (FOWLR) and the protein skimmer.

Protein skimmers do tend to take time (a few weeks maybe) to settle. Before they
are broken in, they will be very sensitive and can easily overflow. I've had three
different skimmers and they all were like that. I even added overflow return ports
to one.
