I love NY style cheesecake. I like it plain or with fruit (cherries, strawberries, or pineapple). I have also had it drizzled with a type of caramel topping. I also like marble cheesecake, that is regular and chocolate cheesecake swirled together. I prefer a graham cracker crust, or a cookie crust.

I have never eaten at the Cheesecake Factory, so I won't bother dining in there just to get half off of a slice. It is too far from me to bother with, too. Many of the bakeries here will sell just a slice if that is what you want.

As a child, I did not like cheesecake, mostly the texture but partly how rich it is.

Tip,

I never liked cheesecake as a child either, it became an acquired taste when I became an adult. I didn't even eat cream cheese itself until I was 23 or 24.

I like NY style as well, I have never had it with pineapple but that sounds fabulous. I especially lone raspberries.
Both the graham cracker and cookie crusts are my favorites too. I have had one with a brownie crust but that was just too over the top.

I have eaten at the Cheesecake Factory a few times: on a business trip, once with a friend and another time with my children - they love cheesecake. We do not have one all that close by, the last time I went to one was in 2011 with the kids. The closest one is nearly an hour away and that's not happening right now, never mind the wait they must have on these event days based on the price of their cheesecake.

They do have some fabulous flavors, I remember trying the Godiva and Chocolate Mousse ones.

I'm hanging in there, thanks for asking. I am quite sore today but there isn't any coloring to my side yet so that's good news. My toe and back are bothering me some, I have a great chiropractor but I don't think I can tolerate a treatment on the table right now because of my GYN problems. Some of the meds I am taking are anti-inflamatories so hopefully they will help with these new issues.

I had hoped to have a really quiet day on Wednesday but that's not happening. The MRI my ex had Monday concerning vascular issues must be of concern and may require surgery to be scheduled. The office called early Tuesday morning and wants him to see the doctor ASAP so we are headed back out tomorrow for another medical appointment. He had a dermatology appt today that I took him to since it required a biopsy and more than I thought my son could handle with the ex meeting new medical staff and feeling woozy afterward. That went okay for the most part, if need be my son can take him next week to have the stitches removed.

On a more positive note DS offered on his own to take me to one of the big box stores to exchange some garden supplies last night. He even willingly helped me in the garden. We stopped by my parents house to drop off a bag of fresh produce, mainly cucumbers. We had a nice visit with my parents.

I was late discovering cheesecake, and when I did was not so excited to try it, but then I did and I was totally sold ;-) I have never made my own but love the ones that my friends have made and like the crusts made of Digestive Biscuits and also with Ginger Nut biscuits (don't know what the US versions of these two are but the ones I am referring to are made by McVitie's)

Cheesecake was an aquired taste for me as well. I prefer small pieces, and as far as flavors, I prefer the cherries or chocolate swirl or Turtle cheesecake. I prefer the softer cheesecake versus the firmer cheesecakes. For Christmas this year, I made an eggnog cheesecake, and I quite enjoyed it. Luckily, that is, since no one else in my house liked it.

Margarita Cheesecake

Ingredients

CRUST
*Nonstick vegetable oil spray
*1 1/4 cups graham cracker crumbs
*1/4 cup (1/2 stick) unsalted butter, melted

FILLING
*3 8-ounce
*1 1/4 cups light sour cream
*3/4 cup plus 2 tablespoons sugar
*2 1/2 tablespoons triple sec or other orange liqueur
*2 1/2 tablespoons tequila
*2 1/2 tablespoons fresh lime juice
*4 large eggs

TOPPING
*3/4 cup light sour cream
*1 tablespoon fresh lime juice
*1 tablespoon sugar
*Very thin lime slices, cut in half
*Very thin lime peel strips

Preparation

FOR CRUST:
Position rack in center of oven and preheat to 350°F. Spray 9-inch springform pan with 2 3/4-inch-high sides with vegetable oil spray. Mix graham cracker crumbs and butter in medium bowl until blended. Press crumbs over bottom and 1 inch up sides of prepared pan. Refrigerate crust.

FOR FILLING:
Using electric mixer, beat cheese in large bowl until fluffy. Beat in sour cream, then sugar, triple sec, tequila and lime juice. Beat in eggs.

Pour filling into crust. Bake until outside 2 inches are set and center moves only slightly when pan is shaken, about 50 minutes. Remove from oven; turn off oven.

FOR TOPPING:
Whisk sour cream, lime juice and sugar in small bowl to blend. Spread evenly over cheesecake. Return cheesecake to hot oven. Let stand 45 minutes or less (Cheesecake will look very soft, but will set up when chilled.) Refrigerate cake until well chilled, up to 1 day.

Run knife around pan sides. Remove pan sides. Place cake on platter. Arrange lime half-slices and peel around top edge of cheesecake.

I love cheesecake, but no way am I in my sister's league. Her wedding cake was a cheesecake. I like real, baked cheesecakes (not the no-bake versions) preferably the kind baked in a water bath, and it just gets better with a fresh blueberry compote, cherry compote or fresh raspberries on top. One of my signature desserts for many years -- and I now have a gluten-free version -- is a chocolate velvet cheesecake decorated with chocolate leaves, made by melting good quality semi-sweet or bittersweet chocolate and painting that on the back of washed and dried rose leaves, or other non-poisonous leaves. It is beautiful, elegant, and delicious. I think I was in my teens when I discovered cheesecake. I don't remember encountering it as a child.

PlaysInTheDirt's Chocolate Velvet Cheesecake:

for the crust --
1 cup vanilla wafer crumbs (or gluten-free cookie crumbs, such as Pamela's Products shortbread cookies)
1/2 cup chopped pecans
3 Tablespoons granulated sugar
1/2 stick butter

Combine crumbs, pecans, sugar and butter; press into the bottom of a 9-inch springform pan. Bake at 325 degrees F, about 10 minutes.

For the cheesecake --
2 8-oz. packages cream cheese, softened
1/2 cup packed brown sugar
2 eggs
6 oz. semi-sweet chocolate pieces, melted (1 dry measuring cup equals 6 oz. chocolate by weight)
3 Tablespoons almond liquer, such as Amaretto

Combine cream cheese and brown sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate (not hot) and liquer; pour over crust. Bake at 325 degrees F for 35 minutes.

2 cups sour cream
2 Tablespoons granulated sugar

Increase oven temperature to 425 degrees F. Combine sour cream and sugar; carefully spread over cheesecake. Bake at 425 degrees F for 10 minutes. Loosen cake from rim of pan; cool before removing rim. Garnish with chocolate leaves (below).

NOTE: You can substitute 2 Tablespoons milk and 1/4 teaspoon almond extract for the liqueur.

To make chocolate leaves:
Wash and dry lemon or rose leaves -- be sure that they have not been sprayed with any chemicals for at least one week (some chemicals require a longer wait, best if no chemicals have been used). Melt semi-sweet chocolate pieces. Dip a pastry brush into the melted chocolate and brush the back of the leaves. Chill on waxed paper. Carefully peel leaves away from chocolate.

I'm not a fan of the no-bake versions either, I think they are a poor imitation and not worth the calories.

Raspberries are one of my favorite berries, I made a compote the other day with some that were not as fresh as I thought they were when I purchased them on Saturday.
