Can you transfer your books and music from the Kindle Fire HD to the newest version HDX? If so, HOW?

Very easy, Eleanor. Your account ownes all the books/apps that you purchase from Amazon. Most books/apps are DRM protected (in other words, keyed to a device). Now all devices that are registered to that account, has access to all purchases (books/apps).

To make a long story short, just register your new Kindle to the same account as the old Kindle (email and password). Sync and a list of all previous Amazon purchases will show up to be re-downloaded.

If you go here and find your new Kindle, you can read up on how to use it before you get it.

A. Dietz says:
You can start even before you actually get it. If you bought your Kindle from https://amazon.com, it is preregistered to you. Once it ships, it will show up as a "deliver to" option in your Manage Your Kindle page and you can start sending books to it from the "actions" link next to each book.

Have you registered your new Fire to the same account as your old Fire? Did you purchase the apps from Amazon? Have you checked the app product page to see if it is compatible with the Fire HDX?
