When you want to read one, download it to your device. When you're done just delete from the device and it will remain in the cloud.

It only takes a few seconds to download a book if you have a fast internet connection, so it's entirely possible you're seeing your cloud unless you've downloaded them yourself.

If you have a Kindle Fire it can be difficult to tell books on the device from those on the cloud. If you're using an e-ink kindle than you'll see only one or the other but on the Fire they're kind of mixed up in the carousel.
