Donna - Yes, just select Remove from Device and it will go to the Archives (Cloud) of the Kindle on which you don't want it to appear.

Yes, but it will not remove all trace. For instance, when you remove the book file from an e-ink Kindle, the title will appear in the Archive list.
When you remove the downloaded file from a Fire, it will show in the carousel as recent actions. You can remove it again from the carousel, but it will still be in the Cloud.

If you want to remove all trace, you have to go to Manage Your Kindle and delete it there, giving up your right to reload it to any device on the account.

I just received a kindle fire as a gift. I want to give my other kindle to my wife. How do I get the stuff off of my old kindle, while keeping it on my new one?

PeepDittie says:
That depends on whether it's a Fire or an e-ink Kindle, and whether you want them both registered to the same account. If you use separate accounts, be aware that you won't both have access to the same purchased content.

I got a fire, my old one is an e-ink. How do I get all the old content off the e-ink so my wife can use it. Also how can I get it off my account so she can establish her own?

PeepDittie says:
Are you absolutely certain you want to have two different accounts? If she wants to read a book that you already bought, she'd have to buy it again unless you both use the same account?

Reset the e-ink Kindle to factory defaults if you want to delete all the content and deregister it from your account. Then she can register it to her own account.

But, if you want to share the same account, just change the Kindle's name and she can delete what she doesn't want while keeping the rest.
